- Choose garlic bulbs that have intact outer skins and a slightly white color.
- Good garlic will have plump cloves that are not too dry, wrinkled, or wilted.
- Avoid buying garlic bulbs that are gray or yellow as these will not be fragrant when cooked.
How to prepare Sweet and Sour Pickled Peppers

Prepare green chili peppers
Prepare a bowl of cold water. Add 3 tablespoons of salt and stir well until the salt is completely dissolved.
Remove the stems from the green chili peppers, place them in the prepared saltwater bowl, and soak for about 10 minutes.
Next, take the peppers out, rinse them thoroughly with water once more, and let them drain. After that, sun-dry the peppers in the shade for about 15 minutes.
Tip: To prevent water from soaking in and making the peppers lose their crunchiness, be careful when removing the stems to avoid damaging the flesh of the peppers! -
Prepare the garlic
Peel the garlic and slice it thinly. Prepare a bowl of water.
Add 1/2 tablespoon of sugar into it and stir until the sugar dissolves completely. Then, add the sliced garlic and soak for 30 minutes.
Next, take the garlic out, rinse it with water once more, and let it drain. Then, blanch the garlic in hot water for about 20 seconds, then remove it, let it drain, and dry it together with the chili in the shade for about 15 minutes.
