  • Choose chili fruits that are straight or slightly curved, with shiny skin and green stems.
  • It is best to choose smaller green chilies as they are more fragrant, spicy but not hot and pungent like other types of chili.
  • Avoid buying damaged or rotten chilies or those with dark spots on the skin.

How to choose fresh garlic

  • Choose garlic bulbs that have intact outer skins and a slightly white color.
  • Good garlic will have plump cloves that are not too dry, wrinkled, or wilted.
  • Avoid buying garlic bulbs that are gray or yellow as these will not be fragrant when cooked.

How to prepare Sweet and Sour Pickled Peppers

  • Prepare green chili peppers

    Prepare a bowl of cold water. Add 3 tablespoons of salt and stir well until the salt is completely dissolved.

    Remove the stems from the green chili peppers, place them in the prepared saltwater bowl, and soak for about 10 minutes.

    Next, take the peppers out, rinse them thoroughly with water once more, and let them drain. After that, sun-dry the peppers in the shade for about 15 minutes.

    Tip: To prevent water from soaking in and making the peppers lose their crunchiness, be careful when removing the stems to avoid damaging the flesh of the peppers!

  • Prepare the garlic

    Peel the garlic and slice it thinly. Prepare a bowl of water.

    Add 1/2 tablespoon of sugar into it and stir until the sugar dissolves completely. Then, add the sliced garlic and soak for 30 minutes.

    Next, take the garlic out, rinse it with water once more, and let it drain. Then, blanch the garlic in hot water for about 20 seconds, then remove it, let it drain, and dry it together with the chili in the shade for about 15 minutes.

  • Make the pickling liquid

    In a pot, add 300ml of vinegar, 300ml of clean water, 3 teaspoons of salt, and 1 tablespoon of sugar, then place it on the stove, turn on medium heat, and stir the mixture until it boils. Then, turn off the stove and let the mixture cool down.

    Put garlic and peppers into a jar that is nearly full jar, then slowly pour in the pickling solution. After that, cover the jar and place it in the refrigerator for about 15 days.

    The finished sweet and sour pickled peppers have a beautiful green color. The peppers and garlic retain their crispness, spiciness, pungency, and original color.
