Pork knuckle 1 kg Young sour plums 100 gr Green onions 10 stalks Red onions 4 bulbs Chili 5 fruits Garlic 1/2 bulb Cooking oil 100 ml Oyster sauce 1 tablespoon Fish sauce 1 tablespoon Common spices a little (seasoning/ pepper/ sugar)

  • When selecting pork leg, you should choose the front leg, as it is more active, the meat will be tender, thin, with a lot of tendons and less fat, making it less greasy to eat, and when cooked, the spices will penetrate deeper.
  • You should choose legs with bright red meat, which, when pressed, has elasticity and no fishy smell.
  • You should avoid choosing legs that are pale white, too soft, have a foul smell, or have broken hooves. This part of the leg may have been stored for too long and no longer retains its freshness.

How to choose fresh soursop

  • When buying soursop, you should choose fruits with intact stems, uniformly green skin without bruises, and firm flesh.
  • You should avoid choosing fruits that are too large or too small, with bruised skin, soft flesh, and a foul smell. These fruits may have been spoiled and will not taste good when cooked.

  • Preparing the ingredients

    After purchasing the pork leg, use a knife to scrape off any hair, then rub it with salt to remove any foul smell, and rinse with clean water. After rinsing, cut the pork leg into bite-sized pieces. Then blanch the pork leg in boiling water for about 1 minute to remove impurities and odor.

    Soursop and chili should have the stems removed and be rinsed clean.

    Peel the garlic and shallots, then rinse them clean.

    For the scallions, only take the green parts, wash them thoroughly, and finely chop them into small pieces.

  • Cook the dry ingredients

    Add 100ml of cooking oil into a pan on the stove, add 3 tablespoons of sugar and stir gently until the sugar is completely dissolved and turns brown.

    Next, add the mixture of green plums, garlic, shallots, and chili that have been prepared, add 100ml of filtered water, and cook over high heat. Then season with 1 tablespoon of oyster sauce, 1 tablespoon of fish sauce, 2 teaspoons of seasoning, 1 teaspoon of pepper, and 1 tablespoon of sugar into the mixture and stir gently until the spices are evenly dissolved and the mixture boils, then add 1kg of prepared pig trotters.

    Put the entire mixture into a pot and cook on high heat for about 45 minutes, until the liquid thickens, deeply infuses the flavor of the pork leg, and the meat is tender, then turn off the heat.

    The braised pork leg dish is completed with the vibrant red of chili, the green of sour fruits, and the pork leg soaked in a beautiful brown color, along with the strong aroma of garlic, onion, and pepper.

    When eaten, there is a mild pungent sensation, the meat is tender and not chewy, with a hint of oyster sauce and a balanced flavor. Serving it with white rice and a few thinly sliced cucumbers is the best.
