How to make Black Sugar Tapioca Pearls

  • Mixing and kneading the dough

    Pour 150g of tapioca flour, 10g of rice flour, 5g of cocoa powder, and 30g of brown sugar into a bowl and use a whisk to mix the ingredients evenly.

    Next, add in 120ml of boiling water and continue to mix well. After about 5 minutes, the tapioca dough will gradually stick together.

    Then, pour the entire dough onto a table. Divide the dough into 4 parts and shape each part into a long cylinder with a diameter of about 1 cm. After that, cut them into small pieces about 1/2 finger length and shape each piece into a round ball.

    Dust a thin layer of tapioca flour over the surface to prevent the tapioca pearls from sticking to each other. Once you have made all the tapioca pearls, you can pour them into a sieve to remove the excess tapioca flour.

  • Making Black Sugar Tapioca Pearls

    Place a pot on the stove, pour in 500ml of water, wait for the water to boil, add all the tapioca pearls, adjust the heat to medium, and cook for 25 minutes.

    After 25 minutes, turn off the heat, remove the tapioca pearls and soak them in cold water immediately. After 2 minutes, take them out to drain.

    Continue by placing a pan on the stove, add 70g of brown sugar and 50ml of water, and bring this mixture to a boil. While waiting for this mixture to boil, use a spoon to stir well so that the brown sugar completely dissolves in the water.

    After 5 minutes, add the tapioca pearls and cook for an additional 7 minutes. Stir constantly to ensure the tapioca pearls cook evenly and do not burn.

    Once the tapioca pearls are cooked and the black sugar starts to caramelize, turn off the heat and let it cool for 30 minutes.

    Black sugar tapioca pearls have a beautiful deep black color, and when enjoyed, they provide a chewy texture that blends well with the mild sweetness of black sugar.

    How to make Pennywort with condensed milk

    • Prepare and filter pennywort juice

      After buying pennywort, remove all yellow and wilted leaves, then wash it clean and let it drain.

      Put the washed pennywort into the blender and blend it until smooth. Then filter the pennywort juice through a sieve, and we obtain the pennywort extract.

    • Mix pennywort with milk

      To make 1 glass of pennywort milk, first mix 15g of sugar with 20ml of condensed milk and 15ml of boiling water, stirring well to dissolve the sugar and milk.

      Next, scoop 150ml of pennywort juice and mix it with the condensed milk mixture you just made, then add another 10ml of heavy cream and stir well to combine.

      Tip:
      • If you don’t use sugar, you can replace it with 30ml of syrup instead.
      • If you want to make more glasses, then increase the amount of sugar, condensed milk, and heavy cream accordingly for each subsequent glass.

      Put a layer of black sugar pearls at the bottom of the glass, then add some ice to fill the glass almost to the top. Pour the pennywort milk mixture into the glass until it is full. Top with another layer of pearls and shredded coconut according to your preference.
