Ingredients for Pig Ear Jellyfish Salad Serves 4 people

Jellyfish 300 gr Pig ear 1 piece (pork ear) Onion, peeled 1/2 bulb Lemon 4 pieces Fish sauce 35 ml Minced garlic 1 tablespoon Chopped chili 1 tablespoon Vietnamese mint leaves 1/2 cup Chopped coriander a little Vietnamese balm a little Cilantro a little Seasoning powder 1/2 tablespoon Sugar 2 tablespoons

How to choose fresh and delicious pig ears

  • You should choose pig ears that are bright white in color, avoiding those with purple or dark spots due to blood clots.
  • You should hold the pig ears up; if the meat is still firm and the ears are solid without being soft, mushy, or limp, they are still good.
  • Do not buy pig ears that have a foul smell or any strange odor.

How to choose fresh and delicious jellyfish

  • The jellyfish you buy at the supermarket or market must have clear labels and origins since properly processed jellyfish can eliminate some toxins present in them.
  • When choosing, be sure to check the expiration date, brand, and the condition of the packaging.
  • Do not choose products that are expired, jellyfish that show signs of deterioration, have a cloudy body, or have a strange smell.

How to prepare Jellyfish salad with pig ears

  • Prepare pig ears and jellyfish

    Wash the pig ears thoroughly. Rub a mixture of salt and lemon juice on the ears to disinfect and eliminate any foul smell.

    Then soak the pig ears in diluted vinegar for about 10 minutes. After 10 minutes, take the pig ears out and let them drain.

    • Using vinegar, lemon, or salt: Use lemon or salt to rub or massage the pig ears with vinegar, then soak the pig ears similarly in a bowl containing lemon juice, diluted salt water, or vinegar for about 15 minutes.
    • Using white alcohol and salt: Use white alcohol to clean the pig ears instead of water, then rub salt all over the ears. After that, rinse with cold water.

    Put a pot of water on the stove and add the cleaned pig ears along with 1/2 an onion, 1/2 tablespoon of seasoning powder, the juice of 1 lemon, and boil the pig ears over medium heat.

    When the pig ears are cooked, remove them and immediately put them in a bowl of ice water and soak for 15 – 20 minutes. Next, take them out, drain, and slice thinly for eating.

    Mix salt and alum into the water until completely dissolved. Soak the jellyfish you just bought through the mixture of water with salt and alum three times until the jellyfish turns light red or light yellow. Then, rinse thoroughly and drain.

    Peel the carrots, wash them clean, let them drain, and cut them into strips. Wash the banana flower clean and let it drain.

  • Making the dressing

    You put 35ml of fish sauce, 2 tablespoons of lemon juice, 2 tablespoons of sugar into a bowl and stir well until the sugar dissolves.

    Next, add 1 tablespoon of minced garlic and 1 tablespoon of minced chili and stir well.

  • Mixing the salad

    In a bowl, add shredded carrots, banana blossoms, prepared jellyfish, thinly sliced pig’s ears, 1/2 cup of mint or Vietnamese coriander leaves, a pinch of chopped Vietnamese balm, a little rice paddy herb, and some coriander along with the dressing, then mix well so that the flavors are absorbed into the salad.
