  • First, you should choose pieces of pork that have a bright pink or light red color. When cut with a knife, the meat should have a pinkish-white color, a slight sheen, and the fat should be bright white and firm.
  • To select good meat, which is not too greasy or too dry due to mostly lean meat, you should choose pieces that have a balanced ratio of fat to lean.
  • Good, clean meat that is not raised with lean-promoting substances usually has a firm texture, with the meat and fat tightly connected, and when held, it should not feel too loose.
  • Avoid choosing pieces of pork that have a foul smell, and when pressed, do not bounce back, as this indicates old, spoiled meat that is no longer fresh.

  • Good eggs usually have a rosy appearance, covered with a layer of white powder, and feel firm in hand. Duck eggs with dull colors or a faint bad smell should not be chosen.
  • When shining a light on the egg, if it shows a transparent pink color with a pink dot in the middle, and the air cell has a diameter of no more than 1 cm, with fixed edges that do not move, then it is a fresh egg. Conversely, old eggs usually have red spots with many veins, and the air cell is wider than 1.5 cm. Spoiled eggs also show uneven colors, with a grayish hue.
  • Dropping a duck egg into a 10% saltwater solution is also a good way to check the egg. When the egg has been stored for 3 – 5 days, it will sink to the bottom when dropped into the solution. If the egg floats on the surface of the solution, it has been over 5 days old and should not be used.
  • Do not choose eggs that make a sloshing sound when gently shaken, as this indicates that the egg has been stored for too long and is no longer fresh.

  • Marinate the meat

    Pork belly or pork leg should be washed with salted water, drained, then cut into bite-sized pieces and placed in a bowl. It is recommended to choose meat with thin skin for better flavor and quicker tenderness, and to avoid greasiness.

    Gradually season the bowl with 1 tablespoon of minced shallots, 1 tablespoon of minced garlic, 3 tablespoons of fish sauce, 2 tablespoons of sugar, 1/3 tablespoon of seasoning powder, and 1 teaspoon of pepper, and mix well.

    Use food wrap to cover the bowl of meat and marinate for at least 1 hour for the meat to absorb the spices.

  • Make the caramel sauce

    Put a pot on the stove, add 1 teaspoon of sugar into the pot and cook over medium heat. At the same time, use chopsticks to stir until the sugar turns a brown color, then turn off the heat.

    Wait for the sugar to cool as the color will deepen, then pour in an additional 1/2 cup (rice bowl) of filtered water to dilute it a bit.

  • Cooking the meat

    You place the marinated meat into the pot of caramelized sauce, stir over high heat until the meat tightens, then pour in 400ml of coconut water.

    Cover the pot and simmer the meat on low heat for 30 minutes. After 30 minutes, if the water has reduced too much, add more water, then add 5 boiled duck eggs that have been peeled into the pot, cover and continue to cook for another 30 minutes until the meat is tender, then turn off the heat.

  • Final product

    Thus, the delicious meat stew is complete and can be served hot. The dish has a very eye-catching brown color, with a rich and enticing flavor.

    The pork is stewed until tender with a light fatty taste combined with the rich duck eggs, making it extremely delicious!
