How to choose delicious ingredients
How to choose fresh and delicious ribs
- Choose fresh ribs that have a pink color, the meat should be elastic, and there should be no sour smell.
- It is advisable to select ribs that have flat and small bones as they contain less bone and more meat compared to larger, round ribs.
- You should also choose ribs based on the purpose of the dish. For stir-fried, braised, or fried rib dishes, loin ribs are the best; you should choose lean ribs with little or no fat, and if the ribs have cartilage, they will taste very good.
How to choose delicious passion fruits
- It is best to choose passion fruits with dark purple skin and large size as these are mature fruits, sweeter, and have more pulp than younger fruits.
- Fresh and ripe passion fruits will have a distinctive aroma when sniffing the skin. If you smell an unusual sour odor, do not buy them as these fruits are spoiled.
- Additionally, to select good passion fruits, you can hold them. If the fruit feels heavy in your hand, it means they have just been harvested and contain a lot of pulp inside.

- Alternatively, you can also use vinegar or lemon, or alcohol to rub evenly on the piece of rib for about 5 minutes and then rinse it clean.
- Using shallots and garlic to marinate the ribs is also a very effective way to remove the smell while adding delicious flavor to the dish.
