Pork ribs 150 gr Ripe tamarind 1 tablespoon (shelled) Minced garlic 1 teaspoon Minced shallots 1 teaspoon Chili sauce 1 tablespoon Fish sauce 1 tablespoon Cooking oil 150 ml Common spices a little (sugar/ seasoning powder/ monosodium glutamate/ ground pepper)

How to prepare Tamarind Ribs (recipe shared by users)

  • Prepare the pork ribs

    Wash the pork ribs thoroughly with diluted salt water, then blanch them in boiling water for about 3 minutes, rinse with clean water, and let them drain.

    • Method 1: To eliminate the odor of pork ribs, before cooking, blanch the ribs in boiling water for about 3 minutes, then rinse the ribs with cold water and proceed to cook.
    • Method 2: Alternatively, you can also use vinegar, lemon, or white wine to rub evenly on the ribs for about 5 minutes, then rinse clean.
    • Method 3: Using shallots and garlic to marinate the ribs is also a very effective way to eliminate odors while adding delicious flavor to the dish.

    Marinate the pork ribs with minced shallots and garlic, 1 teaspoon of seasoning, and 1 teaspoon of monosodium glutamate, use a spoon to mix well and let it absorb for 10 minutes.

  • Make tamarind sauce

    Add 1 tablespoon of ripe tamarind into a bowl with 100ml of boiling water, mash the tamarind to extract about 90ml of tamarind juice.

    Mix the sauce with the formula: 1.5 tablespoons of sugar, 1 tablespoon of fish sauce, 1 tablespoon of filtered water, 1 tablespoon of chili sauce, 1 teaspoon of seasoning powder, and 1 teaspoon of ground pepper. Stir well until everything is combined and dissolved.

  • Make tamarind ribs

    Heat a pan on the stove, add 150ml of cooking oil and heat over medium heat. Once the oil is hot, add the marinated ribs and fry until golden, about 10 minutes, then turn off the heat.

    Take another pan and place it on the stove, add 2 tablespoons of cooking oil (you can reuse the oil from frying the meat), heat the oil until it is hot, then add all the fried ribs back in, and pour in the prepared sauce and tamarind juice.

    Tip: To prevent the ribs from burning when simmering with tamarind, remember to use a different pan!

  • Prepare the Ribs

    After buying the ribs, cut them into bite-sized pieces, briefly blanch them in a pot of boiling water with a few slices of ginger for about 1 minute, then rinse the ribs with clean water a few times and let them drain.

  • Braised Ribs

    Put a pan on the stove and add 2 tablespoons of cooking oil. When the oil is hot, add the remaining minced garlic and sauté until fragrant. Then reduce the heat and add the ribs, stirring evenly for about 2 – 3 minutes until the ribs turn golden.

    Add tamarind juice, 2 tablespoons of sugar, and 1/2 tablespoon of fish sauce to the pan, stir well, then lower the heat and braise the ribs for about 45 minutes or until the sauce thickens, then turn off the heat, sprinkle with some pepper, and serve on a plate to finish.
