How to choose fresh and delicious passion fruit
- You should buy passion fruits with a dark purple or reddish-brown skin; the darker the skin, the sweeter and more fragrant the fruit.
- Good passion fruit will have wrinkled skin, feel light when held, and have a distinctive aroma when sniffed.
- Fruits with smooth skin that feel heavy when held are unripe, sour; if you like the sour sauce for shrimp with passion fruit, you can choose this type.
- Avoid buying fruits with wrinkled skin that are leaking juice and feel soft and mushy, as these are old and spoiled fruits.

How to make Passion Fruit Jelly

Extract passion fruit juice
First, take the flesh of the passion fruit, then strain it through a sieve to get the juice.

Cook passion fruit jelly
Divide 10g of gelatin into 3 portions, divide 120g of sugar into 2 portions.
Add one portion of gelatin to each portion of sugar.
Place a pot on the stove, add 200ml of water, one portion of the gelatin and sugar mixture, and stir on medium heat until the sugar dissolves. When the mixture starts to boil gently, add the passion fruit juice, let it boil for 1 – 2 minutes, then turn off the heat.

Pouring passion fruit jelly
Sift the passion fruit jelly mixture, then pour it into a round mold.
Tip: You can put a little jelly in a round ice tray for decoration.

Cooking fresh milk jelly
Place a pot on the stove, add 300ml of fresh milk and the jelly (without mixing sugar). Stir well over medium heat until the mixture boils, then turn off the heat.

Pouring the second layer
Sift the milk jelly and pour it into the mold.
Tip:
- Remember to let the first jelly layer set before pouring the second layer in; this method will prevent the jelly from separating.
- If there are bubbles on the surface, you can use a sharp stick to pop the bubbles for a more aesthetically pleasing jelly!

Cook, pour the layer, and decorate the third layer of jelly
Cook the jelly layer in:
Put a pot on the stove, add 200ml of water, add the remaining jelly powder and sugar mixture, stir well over medium heat until the sugar is completely dissolved.
Decorate:
Arrange the passion fruit seeds and the passion fruit jelly made in the ice mold on top of the milk jelly.
Strain the clear jelly, then pour it into the mold, sprinkle a little dried coconut on the surface.
Let the jelly cool completely, then place it in the refrigerator for 2 – 3 hours.

The cool jelly is attractively decorated, interspersed with 3 layers of sugary jelly, milk jelly, and chewy, crunchy passion fruit jelly, irresistibly delicious.
