How to choose fresh and delicious shrimp
- When buying fresh shrimp, you should choose live shrimp with transparent shells, smelling of seawater, and straight bodies.
- To choose good shrimp, observe the legs, head, and tail of the shrimp. Good shrimp will have tails that are close together, with legs and heads firmly attached, not falling off from the body.
- Avoid buying shrimp that are leaking water, have bent bodies, or feel gritty when pressed with your hand.
- You should not choose shrimp with black spots under the shell, round and bent bodies, and tails that spread out, as these shrimp have been injected with water, are of poor quality, and their meat will not be sweet and tasty.

Prepare and fry the shrimp
Wash the shrimp to remove dirt and devein them. To devein the shrimp, take the vein and keep the shell intact with a toothpick. Count back from the shrimp’s tail to the second groove between the two segments of the shell, use a toothpick to pierce horizontally through the shrimp at the position of the second segment from the tail and then pull it out.
Then, place a pan on the stove, add 500ml of cooking oil, and once the oil is hot, drop the shrimp in to fry until crispy. When the shrimp turns red and floats on the surface of the oil, remove them.
Tip: To know if the oil is hot enough, test by dropping one shrimp in; if you see bubbles forming around the shrimp, then we can start frying. -
Cook the tamarind sauce
Place a pan on the stove, add 2 tablespoons of cooking oil (reuse the oil from frying the shrimp), finely chop 3 cloves of garlic and 1 chili pepper and sauté until fragrant.
Next, add 3 tablespoons of tamarind juice and 30g of palm sugar, stir well until the sugar fully dissolves; you can adjust the amount of sugar and tamarind juice according to your family’s taste. The mixture will boil and thicken, then turn off the heat.

Make tamarind shrimp
After the sauce thickens, add the crispy fried shrimp and stir well for about 1 minute to finish.
Arrange the shrimp on a plate and drizzle more sauce over it, adding 1 teaspoon of fried onion on top to enhance the flavor of the dish.
