How to make dalgona sugar tiramisu

Beat the eggs
First, beat 2 egg yolks until smooth, then add 20gr sugar, 2gr instant coffee powder, 2ml vanilla extract, and continue to mix well with the machine.
In a new bowl, add 2 egg whites, use the egg beater to beat at low speed until the eggs form bubbles like soap.
Divide 30gr sugar into 3 parts, gradually add each part one at a time and beat until dissolved. Beat each portion of sugar for about 30 seconds at low speed before adding the next portion.
When adding the final portion of sugar to the eggs, switch the mixer to high speed, beat the eggs until they are soft and fluffy, with creamy streaks, and the mixture is sticky, glossy, and smooth. Lift the whisk to create stiff peaks but drooping down is acceptable.
Note:
- Divide the sugar into 2 or 3 parts and add gradually little by little. Avoid adding all at once.
- Egg whites should be at room temperature before beating.

Divide the whipped egg whites into 3 parts.
Add each part to the bowl of egg yolks and gently mix the mixture using a spatula in a folding manner.
Folding technique:- You will gently mix the mixture by lifting from the bottom to the top. Bring the spatula down to the bottom of the bowl, push the heavier ingredients up and fold them to one side. Continue this process until the mixture becomes smooth.
- If you are not confident in the folding technique, you should use a whisk to gently mix the mixture in one direction until it becomes smooth and fine. Do not whisk too vigorously to avoid breaking the air bubbles, which can cause the cake to collapse after baking.

Sift and mix the flour
Sift 65g of flour and 1g of baking powder into the egg bowl and continue to mix evenly using the folding technique until the mixture is well combined.

Preheat the oven to 180 degrees Celsius.

First, use a square mold of 9.5 x 9.5cm and a rectangular mold of 12 x 6.3cm to cut the cake.
Next, place the hardened dalgona candy into a mortar and pound a little, then crush the remaining part.
Tip: If you do not have molds of the above sizes, you can cut the cake according to the size of your molds. -
Mixing the cream cheese
In a new bowl, add 450g of Mascarpone cheese, 70g of sugar, and 5ml of vanilla extract, then mix well to combine.
Next, add 400ml of whipping cream, and use a hand mixer to beat the mixture until it is soft and fluffy, forming smooth waves, lifting the whisk to create a stiff peak that bends down is perfect.

Mix together 3g of instant coffee powder, 100ml of boiling water, and 15g of sugar.
