  • Prepare the ingredients

    Wash the tomatoes, peel them, and cut them into small pieces. Clean the fat, cut it into small cubes, and let it drain.

    Peeled shallots, sliced. Clean the green onions by removing the damaged leaves, cutting off the roots, washing well, and chopping finely.

    Wash the lettuce and coriander, then cut them into bite-sized pieces, discarding the stems and roots. To remove all the dirt from the vegetables, after cutting, soak them in diluted salt water for about 5 minutes, then rinse with water and let drain.

    Add the prepared fat into a pan, stir-fry evenly over medium heat until the fat renders out into liquid fat and the crispy pork cracklings turn golden brown.

    Pour the fat out, keeping only the cracklings and about 1 tablespoon of the fat. Next, add sliced shallots and sauté until golden and fragrant.

    Add minced meat, stir-fry quickly over medium heat until the meat is firm, then add the tomatoes. Cook for about 2 – 3 minutes until the tomatoes soften, then season with 1 teaspoon of salt, 1 teaspoon of seasoning powder, stir well, and cook for another 5 minutes until the tomatoes are tender.

    While cooking, if the tomatoes thicken, add 1/2 cup (rice bowl) of water. Cook for another 5 minutes, then add the mixture of: 1 teaspoon of ground pepper, 1 tablespoon of fish sauce, and 1 teaspoon of monosodium glutamate. Adjust the seasoning to taste, then add the chopped scallions and stir gently before turning off the heat.
