How to choose fresh spinach
- Choose spinach bundles that are still intact, fresh green.
- The leaves should be bright green, not too dark, indicating the greens are still young and contain many nutrients.
- Avoid choosing yellowing, bruised, broken, or rotten bundles.
How to choose delicious carrots
- Should choose carrots that are straight in shape, with smooth skin, bright color, firm, hard, and heavy in hand, as these are the delicious ones with a lot of vitamins.
- Should buy those with a small core, as the smaller the core, the sweeter the carrot.
- You should avoid choosing those with leaves or branches at the bottom, and thick, large shoulders, as these are usually carrots with large cores, which are not sweet and contain fewer nutrients.
- Avoid buying carrots that are misshapen, dark in color, bruised, or have withered leaves.

How to make taco shells (tortilla) from 3 colors of vegetables

Blend spinach
Remove the roots from the spinach, wash it clean, break it into 3 pieces, then put the spinach into the blender and blend with 100ml of water until smooth.

Blend the carrots
Peel the carrots, wash them clean, cut them into small pieces, put them into the blender, and blend together with 110ml of water until smooth.
Tip: You should cut the carrots into smaller pieces to make blending easier. -
Mix and knead the dough
Mix the white dough: Add 200gr of all-purpose flour, 3gr of salt, 3gr of baking powder, 1 tablespoon of cooking oil, 60ml of unsweetened fresh milk, and 60ml of warm water into a bowl, then mix well until the dough sticks together.
Then, use your hands to knead the dough until it is smooth and doesn’t stick to your hands. Cover the dough with plastic wrap and let it rest for 30 minutes.
Do the same mixing process for the white dough but replace 60ml of unsweetened fresh milk and 60ml of warm water with spinach water and blended carrot water to obtain green and yellow dough.
Tip:- While kneading the dough, if it has absorbed all the water but is still dry and crumbly, you need to add a little water and continue kneading until it meets the requirements.
- If the dough is too sticky, add a little more flour to make it smoother.

Divide the dough and shape it
Divide the block of white dough into 4 equal parts, take out 1 part and roll it into a ball. Sprinkle a little flour on the dough ball, then roll it out into thin pieces.
Then use a 26cm diameter plate to press down on the dough and cut off the excess dough around to make the tortilla round. You can adjust the size of the tortillas as needed. Continue to roll out the remaining white dough.
Do the same with the green and yellow dough.
Note:- When rolling the dough, roll it into thin round tortillas, roughly the size of rice paper but thicker. Use the method of rolling from the center of the ball out to the edges to achieve the most evenly round shape possible.
- Before rolling, sprinkle a layer of flour so that the tortillas do not stick to the rolling pin.
- When baking, the tortillas will shrink, so when shaping, you should make them larger than the size you want!

Grilling the cake on the pan
Spread a thin layer of cooking oil on a non-stick pan, place the pan on the stove and turn on high heat.
Then place the cake in the pan and start grilling each side for 1 to 2 minutes until you see light brown spots and slight bubbles, then take the cake out.
Tip for you: Besides grilling on the pan, you can also bake the cake using the oven or the air fryer as well! -
Final Product
When you just take the cake out of the pan, place it on a large clean towel and wrap it up.
The cake may be a bit dry and crispy right after frying, but it will quickly steam and soften again when wrapped in the towel.
