How to Choose Fresh and Delicious Cay
- You should choose live cay to ensure the quality of the fish sauce.
- Good cay has a dark brown outer shell, shaped like a crab, but smaller in size.
- Choose cay that is about the size of your thumb because this type is softer and easier to grind.
- Do not buy dead cay or those with an unpleasant smell; they will not make good fish sauce.

How to Make Fish Sauce from Crabs
-
Prepare the Crabs
After purchasing the crabs, remove the apron, discard the shell, and rinse several times with water until the water is clear. Then take the crabs out and let them drain.
-
Grind the Crabs
Add the crabs and salt into the blender at a ratio of 3 tablespoons of crabs to 1 tablespoon of salt. Repeat the process until all ingredients are used. Add 5 tablespoons of diluted saltwater into the mortar and blend the mixture until smooth.
-
Ferment the Fish Sauce
After grinding the crabs, place them in a glass jar with a lid. Pour 1/2 can of beer to rinse the mortar and then pour all the beer into the glass jar, stirring well.
Next, add 150 grams of toasted rice powder and continue to stir the mixture evenly.
Use a clean cloth or plastic wrap to cover the mouth of the jar, securing it with a rubber band. Expose the fish sauce to the sun for 10 to 15 days before enjoying.
Tip: In the first 1-2 days, you should stir the fish sauce before and after sun exposure; this will help prevent the sauce from turning dark.
-
Mixing delicious fish sauce
Stir the fish sauce well, add 6 tablespoons of fish sauce into a bowl, then add 1 teaspoon of MSG, 2 teaspoons of sugar, juice from 1 lime, and stir well until all the ingredients dissolve. Finally, add 1 sliced chili (or more to taste) for a delicious bowl of fish sauce.

Product
The finished fish sauce has a characteristic aroma of fish sauce and a very beautiful pink color. The saltiness of the fish sauce is moderate, not too salty.
After mixing with other spices, you will have a bowl of fish sauce that is sour, spicy, salty, and sweet to dip with other dishes. You definitely have to try it!
