How to Choose Fresh and Delicious Pork

  • Choose pieces with bright red lean meat, a dry surface, and no dark spots or sliminess.
  • You can check the freshness of the meat by pressing it with your hand; if it feels firm and bouncy, it is suitable for purchase.
  • Avoid pieces that are too pale in color and have an unusual odor when smelled.

  • Kneading the dough

    Use a dough mixer to beat all the ingredients for 7 – 10 minutes until the dough forms a mass, is smooth and elastic, and can be stretched into a thin film without tearing.

    Note: If you do not have a dough mixer, you can knead by hand following these steps:

    • First, fold the dough, then use the palm of your hand to press and stretch the dough away (Folding and Stretching). Note that you should press and stretch the dough away, not press down.
    • Next, rotate the dough mass 90 degrees and repeat the two steps above for 25 – 30 minutes.

    How to recognize if the dough is good:

    • The dough is smooth and elastic.
    • The dough does not stick to your hands: When pressed, it feels slightly sticky, but when you lift your finger, the dough does not stick to your hand.
    • You can stretch the dough into a thin film without tearing.
    • Test the dough with the Windowpane test: take a piece of dough, stretch it out. If the dough forms a thin film that does not easily tear and light can pass through, it is good.

    After kneading, divide the dough into portions of about 200g. Dust a layer of flour on the table, lightly knead each portion of dough, then roll it into a ball and flatten it. Repeat the steps until all the dough is used up.

    Place the flattened dough pieces onto a baking tray lined with parchment paper, then put them into the oven and proof at a temperature of 30 degrees Celsius, with 80% humidity for 1 hour.

  • Baking the bread

    Preheat the oven to 200 degrees Celsius for about 15 minutes before baking. Place the baking tray in the oven and bake at 200 degrees Celsius for 15 minutes.

  • Marinating the meat

    Marinate 500g of pork neck with 1 tablespoon of chicken seasoning, 1 teaspoon of pepper, 1 tablespoon of yellow mustard, thyme, and rosemary. Mix well to let the meat absorb the spices.

  • Roasting the meat

    Wrap the meat in aluminum foil, place it in the oven, and roast at 200 degrees Celsius for about 50 minutes.

    Then, unwrap the foil and continue roasting for about 10 minutes to brown the outside of the meat evenly. After roasting, let it cool and slice the meat into thin, bite-sized pieces.

  • Make bread salad

    Put 200g mayonnaise, 2 tablespoons ketchup, 2 tablespoons chili sauce, and 1/3 tablespoon Tabasco sauce into a large bowl and mix well.

    Wash the red cabbage, white cabbage, lettuce, and tomatoes, drain and slice them thinly.Add the sliced vegetables to the sauce mixture and stir evenly.

  • Make the sauce

    Add 4 egg yolks, 300g cooking oil, 1 teaspoon salt, 1 teaspoon pepper, and 1 teaspoon lemon juice into a bowl. Use a mixer on low speed until the mixture is smooth and has a light yellow color.

    Note: The seasoning can be adjusted according to individual taste.

    Cut the bread into 4 pieces. Evenly drizzle the accompanying sauce inside the bread, add a layer of salad and a layer of grilled meat to finish.

    How to Choose Safe and Delicious Chicken

    • Choose chicken thighs with light yellow skin, and the meat inside should be naturally pink-red.
    • Press the meat with your hand to check; if the meat is firm and elastic, it is good chicken. If the meat is mushy, slippery, deformed, or dented, do not buy it to avoid health risks.

    How to make Turkish Chicken Bread

    • Mix the dough

      First, put 300g of flour, 1/2 tablespoon of instant yeast, 1 teaspoon of salt, and 1 teaspoon of sugar into the bowl and mix well.

      Next, add 2 tablespoons of melted unsalted butter, 1 beaten egg, 120ml of unsweetened fresh milk, and continue to mix until the ingredients stick together.

    • Kneading and Proofing the Dough

      Place the dough on the table and use your hands to knead it using the Folding and Stretching technique.

      First, fold the dough over, then use the heel of your hand to press and stretch the dough away from you. Note that you should press and stretch the dough away, not press down. Next, rotate the dough by 90 degrees and repeat the two steps for 15 minutes.

      When the dough forms a uniform mass, add 1 teaspoon of olive oil on top of the dough and continue kneading for another 5 minutes until the dough is smooth and elastic.

      Next, place the dough in a bowl, evenly coat the surface with a layer of cooking oil, cover tightly with plastic wrap, and let it proof for about 1 hour until the dough doubles in size.

    • Shaping and Second Proofing

      After proofing, lightly knead the dough to push out all the air bubbles, then divide the dough into 2 equal parts.

      Shape each portion of dough into a ball, then roll it out thinly so that the thickness of the dough is about 1/4 of a little finger. Next, cover the dough completely and let it proof for the second time for 15 – 20 minutes.

      After the second proofing, beat 1 egg, then use a brush to apply a thin layer on the surface of the dough, sprinkle with a little white sesame seeds and a little black cumin seeds.

    • Baking the bread

      Preheat the oven to 180 degrees Celsius for 15 minutes. Then, bake the bread for 15 – 20 minutes at 180 degrees Celsius until golden brown.

      Rinse the chicken thighs with diluted salt water for about 2 – 3 minutes, then rinse again with clean water and let drain.

      In a bowl, add: 81g unsweetened yogurt, 2 tablespoons of ketchup, 1/2 tablespoon of garlic, 1/2 tablespoon of minced ginger, 1 teaspoon of salt, 1 teaspoon of chili powder, 1 teaspoon of ground pepper, 1 teaspoon of paprika, 1 teaspoon of dill powder, 1 teaspoon of oregano, 1/2 teaspoon of thyme, 1 tablespoon of lemon juice, 1 tablespoon of olive oil. Stir well to combine the mixture.

      Next, add the chicken to the marinade, mix well and marinate the chicken for 30 – 40 minutes. After marinating, skewer the chicken onto bamboo sticks and grill.

    • Grill the meat

      Place a pan on the stove, add about 1 tablespoon of olive oil, and heat it up.

      Next, place the meat skewers in the pan and sear all sides over low heat until the meat is fully cooked. Finally, transfer the meat to a plate and use a knife to slice it vertically into thin, bite-sized pieces.

    • Make the sauce

      Add to a new bowl 245g of unsweetened yogurt, 57g of mayonnaise, 1/2 teaspoon of minced garlic, 1 tablespoon of lemon juice, a pinch of salt, 1.5 tablespoons of parsley, and 1 grated cucumber. Mix well to combine the sauce.

    • Prepare the vegetables

      Peel the onion, wash it clean, and then cut it into thin strips. Wash the cucumber and slice it into thin round pieces.

      Similarly, wash the tomatoes, cut them in half, and then slice them thinly.

      For the white cabbage and purple cabbage, use a knife to cut them into thin strips. Then, soak in diluted salt water for 5 – 10 minutes, wash again, and drain.

      First, cut the bread into four equal parts. Then, take one piece of bread and slice it in half.

      Next, spread inside the bread: a little white sauce, a little chili sauce. Then, add in order: chicken, onion, cucumber, white cabbage, tomato, purple cabbage, chicken.
