Ingredients for Trolli gummy candy shaped like an eye For 20 pieces
Sugar 270 gr Water 200 gr Starch syrup 100 gr (syrup) Gelatin 40 gr (15gr gelatin powder and 10 gelatin sheets) Lemon juice 30 gr (10gr for the red syrup and 20gr for the colored jelly) Food coloring a little (as desired) Flavoring 1 teaspoon (as desired)

What is Gelatin?
- Gelatin is extracted from collagen found in skin (for example, pork skin) and animal bones. It can be said that gelatin is a form of odorless protein (sensitive people may detect a slight odor), tasteless, available in both clear and slightly yellowish varieties. Unlike agar powder, gelatin typically has a soft, airy texture similar to cream.
- You can use gelatin in either powder or sheet form. Be sure to soak gelatin in cold water before melting it! For 10gr of gelatin powder, use 25-30ml of water, and for gelatin sheets, squeeze out excess water after soaking before heating.
What is starch syrup?
- Starch syrup, also known as starch syrup, is processed from potatoes, cassava, barley, or wheat through a process of incomplete starch hydrolysis.
- Starch syrup has a sweet taste, but its sweetness is not as strong as cane sugar. It is often used in cakes, candy, ice cream, and helps extend the shelf life of cakes candy at the best quality.

How to make gummy trolli eye-shaped candy

Cook red syrup
First, add 50g of sugar, 40g of water, and 10g of lemon juice into a pot, and stir all the ingredients well.
Cook the sugar water over medium heat until it boils vigorously, then reduce to the lowest heat, and cook until it turns a light brown color and thickens, then turn off the heat. After turning off the heat, stir gently to prevent the sugar from sticking to the bottom of the pot.
Next, add 1-2 drops of red food coloring (can be omitted or replaced with any color you prefer) into the sugar water mixture and stir well.
Pour the red syrup mixture into a bowl, and let it cool.
Tip:- After the mixture boils, you should cook the sugar water over low heat to avoid burning at the bottom of the pot. Do not stir the sugar water while it is cooking on the stove to avoid breaking the sugar structure.
- If the syrup is too thick after cooling, you can dilute the mixture with a little warm water to make it thinner.

Color Jelly Preparation
First, soak 15g of gelatin powder in about 20ml of cold water for 5 – 10 minutes to allow the gelatin to swell (the soaking water is not included in the recipe!).
In the meantime, mix 20g of sugar and 20g of lemon juice into 80g of water, stirring well. Add the soaked gelatin powder into the mixture and stir gently before placing it in the microwave for 10-15 seconds to melt the mixture.
Divide the mixture into 2 parts (in a ratio of 6:4). Mix part 4 with black food coloring and pour it into a tray. Split the larger portion into 6 equal parts and color them with food coloring to your liking.
Note:- If the gelatin solidifies while you are working, you can microwave it to melt the mixture again.
- If you don’t have a microwave, you can melt the gelatin by using a double boiler!

Creating the Iris
First, you need to spread oil on the round mold to prevent sticking. Then, pump the colored jelly into the mold to create the iris.
Use a piping bag or the cap of a bottle to cut the black jelly into round pieces. Gently place the round black jelly pieces in the center of the mold to form the pupil.
Finally, you pump more colored jelly around to secure the black jelly.
Tip:- It is advisable to use vegetable oil such as soybean oil, sunflower oil,… Avoid using animal fat to not affect the flavor of the candy.
- If you don’t have a pump, you can also use a piping bag with a small round tip as a substitute.

Cook the syrup
First, soak 10 sheets of gelatin in 20ml of cold water for 5-10 minutes.
Meanwhile, put 200g of sugar, 80g of water, 100g of starch syrup, and your preferred flavoring into a pot, and simmer on low heat. Once the mixture boils vigorously and thickens, turn off the heat and pour it into a bowl.
Note:- Do not cook until the syrup changes color!
- It’s recommended to let the syrup cool to about 70 degrees to ensure it can be whipped when beaten.

Whip the syrup with gelatin
Remove the soaked gelatin sheets, gently squeeze out excess water, and add them to the syrup, stirring until the gelatin dissolves.
Then, use a mixer to beat the syrup and gelatin at high speed until the mixture doubles in volume, then reduce to low speed and continue beating until the mixture is fluffy and thick. When lifting the whisk, the mixture should flow down in ribbons.
Finally, transfer the whipped syrup into a piping bag to complete.
Note:- It’s best to choose a bowl with a thick base when whipping the syrup.
- Be careful to avoid splattering syrup onto your hands while beating to prevent burns!

Shape the eye candy
First, you pump the whipped syrup from step 5 into half of the mold. Wait for 5 minutes for the syrup surface to slightly set, then pump a little red syrup into the center.
Next, you pump the remaining whipped syrup to cover the mold’s surface and use the other side of the tray to press firmly to create a round shape. Place the candy mold in the refrigerator to set for 4 to 5 hours.
Once the candy has set, carefully separate the sticky candy pieces with your hands. You can use scissors to trim any excess around the edges to make the candy rounder and more beautiful.
Note: use a moderate amount of syrup; otherwise, it may overflow when shaping. -
Final Product

Tips for Successful Execution
- It is advisable to use aluminum or stainless steel pots to prevent the sugar from burning at the bottom of the pot.
- Do not use glass pots as the high temperature of boiling sugar can crack the bottom of the pot.
How to Store Jelly
- Homemade jelly types after being poured into molds can be covered tightly with plastic wrap and stored in the refrigerator, to be used within 10 – 15 days.
- When storing jelly in the refrigerator, avoid placing it near raw or pungent-smelling foods, as they will affect the flavor and quality of the jelly.
