Prepare Ingredients
Put a pot on the stove and boil 50 grams of green peas. Boil the peas until the water boils for 3 – 4 minutes, then remove the peas and let them cool.
Wash 50 grams of lard several times with salt water, then soak the lard in water mixed with a little wine to reduce its smell.
Soak glass noodles and wood ear mushrooms in warm water. Soak until both the noodles and mushrooms expand, then use a knife to cut both into small strands.
Next, tear the bread into small pieces, then soak it in 220 ml of fresh milk, combining to mash the bread in the milk; this bread will help make the chả softer, more fragrant, and tastier.
After preparing the bread, add 100 grams of minced beef, 200 grams of minced pork, 1 tablespoon of seasoning, and half a tablespoon of sugar, then mix this chả mixture well.
Continue to add eggs, wood ear mushrooms, glass noodles, boiled peas, roasted peanuts, 2 tablespoons of garlic, and 2 tablespoons of pepper, then use your hands to mix the chả evenly.

Prepare the wrapped sausage
Evenly spread the lard on the bowl.
Divide the meat mixture into 4 portions. Then, place the sausage into the bowl that has been lined with lard. Press the sausage down and wrap it up with the lard. Note to tightly press the meat so that the final product is round, cohesive, and more aesthetically pleasing.
Repeat several times until all the sausage mixture is used up.

Steam the wrapped sausage
Place the sausage in the steamer, and steam it for 15 minutes.

Final Product
After the sausage is cooked, you take it out by inverting the bowl onto a plate.
Using a knife, gently cut the surface of the sausage, then add green onions, roasted peanuts, and a little cilantro on top of the product to decorate the dish and make it more visually appealing.
When eating the wrapped sausage, it can be served with shrimp crackers (or rice crackers), and the combination of the crispiness of the shrimp crackers and the deliciousness of the wrapped sausage is a must-try.
Tips for successful execution:
- You can omit the bread component to have a fluffier sausage and maintain the dryness of the meat.
- If you cannot find lard, you can use pork fat to brush around the bowl before steaming the sausage.
