    Place a pot on the stove, add 800g of sugar, 300ml of fish sauce, and 300ml of vinegar to the pot. Turn on the stove, adjust to medium heat, stir gently and cook this mixture until the sugar completely dissolves, when it boils, turn off the heat and let it cool.

  • Preparing Ingredients

    Green mustard greens should be sun-dried for about 1 hour until they are slightly wilted. After 1 hour, blanch them in boiling water for about 3 minutes, then rinse thoroughly with water.

    For napa cabbage, wash it thoroughly and cut it into pieces about 2 finger lengths long, then place it in a bowl, add 20g of salt, and marinate for 30 minutes. After 30 minutes, rinse with clean water and let it drain.

    Lotus root should be peeled, washed clean, and sliced thinly, then rinsed again with cold water.

  • Boiled Lotus Root

    Place a pot of water on the stove, add about 400ml of water and bring to a boil, once the water is boiling, add the lotus root and boil for about 10 minutes until it is cooked!

    Next, carefully remove the lotus root into a bowl, add ice cubes, and an additional cup of water to help the lotus root become crispier, soak the lotus root in this mixture for 10 minutes.

  • Mix Carrots and Radishes with Salt

    Peel the carrots and white radishes; you can shape them like flowers if you want, wash them thoroughly, then slice them thinly. After slicing, put them in a bowl, add 20g of salt, and marinate for 10 minutes.

    After 10 minutes, rinse with cold water and let them drain in a colander.

    Next, use plastic wrap to cover the bowl tightly, and leave it at room temperature for 2 days.
