How to choose delicious watermelons
- Choose watermelons that have a symmetrical head and tail, and are round. Conversely, avoid those with a large head, small tail, or those that resemble a gourd (narrow in the middle) as these are usually not fully ripe and not tasty.
- Select watermelons with withered stems as these indicate that the watermelon is fully ripe; on the other hand, watermelons with fresh green stems may have been picked before ripening and will not be sweet.
- Tap the watermelon with your hand; if you hear a deep, heavy “thud” sound, it indicates that the watermelon is ripe. If the sound is too light, the watermelon is still unripe.

How to make Watermelon Jelly Cheesecake

Whip the cream cheese
Soak 1.5 sheets of gelatin in cold water for about 10 minutes, then melt in the microwave for 10 seconds.
Blend 150g of cream cheese with 40g of sugar until smooth, then add 30g of yogurt, 2ml of vanilla extract, 3ml of lemon juice, and the melted gelatin, then mix well.

Mix whipping cream and pour into the mold
Add 90g of whipped cream (50% whipped) to the bowl of cream cheese and stir well to combine the mixture.
Tip: Whipped cream at 50% will have a liquid state but will be slightly thickened compared to its original state. However, at this point, the cream still cannot form clear swirls or peaks.Line the mold with parchment paper and pour the mixture into a 15.5cm mold, then refrigerate for 90 minutes.
In a new bowl, add 135ml of apple liqueur and 10g of sugar, then stir until the sugar dissolves. Then, add 2 sheets of gelatin that have been melted into the bowl and continue to stir well.
Pour half of the apple liqueur mixture into a 20.3cm rectangular mold and refrigerate for 20 minutes.

Prepare the watermelon
Cut the watermelon into 2 pieces about 1/2 of a small finger thick.
Next, remove the rind and cut the watermelon flesh into many triangular pieces. On each triangular piece, attach 2 chocolate chips to create a shape.
For the remaining watermelon flesh, dice it finely and blend it until smooth. Then, add 25g of sugar, 5 melted gelatin sheets, and stir well to combine the mixture.

Pour the watermelon and cream cheese into the mold
Arrange the triangular watermelon pieces in the apple jelly mold, then pour the remaining apple jelly into the mold. Continue to place the mold in the refrigerator for 10 minutes.
Tip: Remember to place the side with the chocolate chips facing down in the mold!Place the set cream cheese in the apple jelly mold, then pour the blended watermelon mixture on top.
Place this cake mold in the refrigerator for 1 hour.
Note: Remember to reserve about 100ml of the blended watermelon mixture! -
Make the cheesecake crust
Put 80g of finely crushed biscuits and 40g of melted unsalted butter into a bowl and mix well.

Pour the cake base and complete
Pour the remaining 100ml of watermelon mixture into the mold, then spread the biscuits evenly on top.
Continue to place the cake in the refrigerator for another hour to finish.
Tip for removing the cake from the mold: Heat a towel, wrap it around the mold for about 30 seconds, then slowly lift the mold away from the cake. -
