Prepare the watermelon rind
First, wash 500g of watermelon rind thoroughly and let it drain. Then, use a knife to peel off the green outer skin and any remaining pulp inside, and then cut the rind into bite-sized strips.
Next, place the watermelon rind in a bowl, add 1 tablespoon of coarse salt, mix well, and soak for about 30 minutes to allow the rind to release water and soften.
Then rinse the rind with about 4 – 5 washes of clean water to remove excess salt, ensuring the final dish is not too salty. After that, place the rind on a clean cloth, squeeze out the excess water, and sun-dry for 1 – 2 hours until dry.

Pickled Watermelon Rind
Put a pot on the stove, add 1 tablespoon of sugar, 1 tablespoon of water, and heat the mixture over medium-low heat until it turns a brown color.
Next, add 10 tablespoons of fish sauce, 5 tablespoons of sugar, and 1 cup of water (about 60 – 70ml) and 1 teaspoon of monosodium glutamate to the pot, stirring until dissolved.
Finally, chop about 1 teaspoon of minced garlic and 1 teaspoon of minced chili and add them to the pot, stirring well, then turn off the heat. After that, wait for the mixture to cool completely before transferring it to a container, and store it in the refrigerator for later use.
Note: Depending on whether the watermelon is large or small and the family’s taste, you can adjust the seasoning so that the mixture has a slightly salty and sweet flavor. -
