The first way is to observe the color on the squid’s body; if the body has a dark brownish-purple color and the white part of the body has a milky, cloudy color, then that is fresh and delicious squid.

For the second way, you can check the freshness by pressing on the squid’s body with your hand; if you feel the flesh is firm and elastic, then that is fresh squid, otherwise, if the body is soft and mushy, pressing it leaves a dent and takes a long time to return to shape, then that squid is not fresh.

Prepare the seafood
Preparing shrimp: You should soak the shrimp in a little salt, then rinse them clean and cut off the shrimp heads.
Next, peel the shrimp and use a knife to make a slit along the back or use a toothpick to remove the black vein on the back of the shrimp. Finally, rinse the shrimp one more time to clean them before cooking.
Preparing squid:
First, hold tightly and gently pull the squid tentacles away from the body, then remove the ink sac and digestive gland from the tentacles. Next, pull out the white backbone from the squid body. Then cut along the body and remove any remaining internal organs inside the squid.
Use a knife to lightly cut a line on the outer side of the squid head to peel off the skin. Finally, rinse clean with white wine, ginger, vinegar, or lemon to completely eliminate the fishy smell.
Boil about 2 liters of water, wait for the water to boil and then gradually add the wine and ginger. Next, add the prepared shrimp above and blanch for 3 – 4 minutes, then remove. After that, add the prepared squid, blanch the squid for another 3 – 4 minutes, then remove.

Peel the carrot, wash it clean, drain it, and then cut it into dice.

Boil the noodles
Pour about 2 liters of water into a pot and bring it to a boil, then add 1/4 tablespoon of salt and 2 tablespoons of cooking oil to enhance the flavor of the noodles and prevent them from sticking together after being drained.
When the water boils, reduce the heat and boil the noodles until nearly cooked (do not overcook the noodles as they will become mushy and unappetizing), the boiling time varies from 8 to 10 minutes depending on the type of noodles (for more accuracy, please follow the cooking instructions on the package).
When the noodles are cooked, drain them in a colander. After draining, toss the noodles with a little cooking oil or olive oil to prevent them from clumping and sticking together.
Note: To prevent the noodles from breaking and becoming mushy while cooking, add the noodles only when the water is boiling. After about 30 seconds, when the noodles start to soften, use tongs or chopsticks to stir gently in a circular motion to ensure all the noodles are submerged in the water; do not stir too much as this will cause the noodles to break.

Make the sauce
Place the pan on the stove, wait for it to heat evenly, then add 30g of butter and spread it across the surface of the pan.
Add 30g of minced garlic; when the garlic turns golden and fragrant, continue by adding 70g of chopped onion and 50g of diced carrot. Stir well until the carrot is cooked and the onion becomes slightly translucent.
Next, gradually add 250g of tomato sauce, then add 1/3 teaspoon of seasoning powder, 1/4 tablespoon of pepper, 40ml of cream, and 10g of bay leaves into the mixture.
Cook the sauce until it thickens slightly, then add the shrimp and squid and stir well.
Continue by adding the drained noodles, stir-frying the noodles with the shrimp and squid until they are just cooked.
Season with salt and pepper to taste, then turn off the heat.

After turning off the heat, plate the noodles, sprinkle with pepper, and add parsley or cilantro on top for an attractive decoration that enhances the dish’s appeal.
