How to choose fresh and delicious chicken feet
- You should look at the color of the chicken feet; if they have a natural pinkish-white color, no red, green, or yellow spots, and they feel firm to the touch, then they are good chicken feet.
- Chicken feet usually have 4 claws that curve inward; if when pressed they puff up, you should buy them, as these are fresh chicken feet.
- Avoid buying chicken feet that are dark purple, black, or have dark red blood spots.

Prepare the Chicken Feet
After purchasing the chicken feet, peel off the yellow skin on the outside, use a knife to cut off the toenails, and split them in half.
Tip: At this step, when buying chicken feet from stores, you can ask the seller to help you process them.
Then use a mixture of vinegar and salt to wash and eliminate the unpleasant odor of the chicken feet. Rinse a few times with clean water and let them dry.
Methods to Eliminate Odor from Chicken Feet:
Method 1: After cleaning, soak the chicken feet in diluted lemon juice to remove the odor. After soaking in lemon juice, rinse with water and then cut the chicken feet in half.
Method 2: Soak the chicken feet in a mixture of diluted salt water, add a small piece of ginger, and soak for about 15 – 20 minutes. Remove and rinse with clean water before cooking.
