Chicken feet 500 gr Satay 4 tablespoons Minced garlic 1 tablespoon Minced shallots 1 tablespoon Coarse salt 1/2 tablespoon Minced lemongrass 1 tablespoon Oyster sauce 2 tablespoons Honey 1 tablespoon Chili powder 1 tablespoon

How to choose fresh and delicious chicken feet

  • You should look at the color of the chicken feet; if they have a natural pinkish-white color, no red, green, or yellow spots, and they feel firm to the touch, then they are good chicken feet.
  • Chicken feet usually have 4 claws that curve inward; if when pressed they puff up, you should buy them, as these are fresh chicken feet.
  • Avoid buying chicken feet that are dark purple, black, or have dark red blood spots.
  • Steer clear of chicken feet that are too soft as they may be thawed frozen chicken feet, which will not taste good.
  • Be cautious with chicken feet that are pure white as they are likely to have been chemically treated.

How to Make Grilled Chicken Feet with Satay

  • Prepare the Chicken Feet

    After purchasing the chicken feet, peel off the yellow skin on the outside, use a knife to cut off the toenails, and split them in half.

    Tip: At this step, when buying chicken feet from stores, you can ask the seller to help you process them.

    Then use a mixture of vinegar and salt to wash and eliminate the unpleasant odor of the chicken feet. Rinse a few times with clean water and let them dry.

    Methods to Eliminate Odor from Chicken Feet:

    Method 1: After cleaning, soak the chicken feet in diluted lemon juice to remove the odor. After soaking in lemon juice, rinse with water and then cut the chicken feet in half.

    Method 2: Soak the chicken feet in a mixture of diluted salt water, add a small piece of ginger, and soak for about 15 – 20 minutes. Remove and rinse with clean water before cooking.

    Method 3: For frozen chicken feet, you need to thaw them first, then rinse multiple times with water and follow similar odor elimination steps as mentioned above.

    Peel the outer skin of the shallots and garlic, remove the stems from the chili, and cut off the roots and green leaves of the lemongrass, then wash all ingredients thoroughly. Chop the shallots, garlic, and lemongrass into small pieces.

  • Make the sauce mixture and marinate the chicken feet

    Put the prepared chicken feet into a large bowl along with 4 tablespoons of satay, 1 tablespoon of minced garlic, 1 tablespoon of minced shallots, 1/2 tablespoon of coarse salt, 1 tablespoon of finely chopped lemongrass, 2 tablespoons of oyster sauce, 1 tablespoon of honey, and 1 tablespoon of chili powder.

    Mix well and marinate the chicken feet for about 1 – 2 hours in the refrigerator to absorb the spices.

  • Grilled Chicken Feet with Satay

    Put the marinated chicken feet into the air fryer or an oil-free fryer, grill at a temperature of 200 degrees Celsius for 20 minutes for the chicken feet to be cooked. During the grilling process, you can set it to grill for 10 minutes, then open the oil-free fryer to turn the chicken feet over and grill for another 10 minutes.

    When the chicken feet are cooked, take them out onto a plate, and you can decorate with some lettuce for a nice look, serve with a bowl of dipping sauce to complete the dish.
