How long can fertilized duck eggs be used?

Fertilized duck eggs, or “hột vịt lộn,” are duck eggs that have developed into a recognizable embryo. In simpler terms, these are duck eggs that are in the process of being incubated.

Typically, duck eggs can be incubated for about 16 to 19 days before they can be used for cooking. Depending on whether people prefer younger or older fertilized eggs, they will remove the eggs earlier or later from the incubator.

Duck eggs that hatch will require 28 days of incubation in an incubator. In contrast, fertilized duck eggs can be used in about 17 days.

To preserve live fertilized duck eggs, you need to keep the eggs in a warm place, at a temperature of about 37 degrees Celsius. At this temperature, the embryo will continue to live and develop normally, and when eaten, it will retain its deliciousness as if just taken out of the incubator.

With this method of preservation, the eggs can be kept for 1 to 5 days while still tasting very good. If left longer, the eggs will mature, and the embryo will have more feathers.

Storing boiled fertilized duck eggs in the refrigerator

You can store boiled fertilized duck eggs in the refrigerator for about a week. However, this is under the condition that the eggs are placed in the refrigerator within 2 hours after being boiled.

When storing boiled fertilized duck eggs in the refrigerator, you should not peel the eggs. The eggs should be kept intact to ensure that the original nutritional content is preserved.

In addition, at a temperature of 10 degrees Celsius in the refrigerator, balut eggs are very susceptible to bacterial invasion. Therefore, when storing eggs in the refrigerator, you should place them in a box, seal the lid tightly, and when taking them out for use, you should reheat them.

However, nutrition experts have advised that balut eggs should be eaten right after boiling and should not be stored for long.

Or if they must be stored, they should only be used within 7 days. Because if left too long, the egg white will become rubbery and watery after thawing, and eating them may cause some digestive issues.
