Garlic 1 kg Cooking vinegar 700 ml Salt 3 tablespoons Sugar 200 gr Filtered water 700 ml

How to choose garlic

  • Choose fresh, intact garlic with a dry outer skin that is not moldy or damaged. Garlic that is not scratched or spoiled will help ensure the quality of the pickled garlic after completion, preventing spoilage during storage.
  • The garlic cloves should be uniform, firm, and not dry or wilted. Fresh and firm garlic cloves will help the pickled garlic maintain its crispness and not become mushy when soaked for a long time.
  • Avoid choosing garlic with green sprouts as they diminish the flavor and color when pickling. Garlic with sprouts not only affects crispness but also makes the garlic taste bitter, unlike fresh garlic.
  • Choose freshly harvested garlic that is bright white and not too soft, helping the pickled garlic to be more delicious and crispy. Fresh garlic will ensure high quality, without wilting or losing moisture, providing the best results for the pickling process.
  • Fresh garlic has a distinctive aroma and does not have a strange or foul smell. If the garlic has an unusual or foul smell, it may be spoiled and should not be used for pickling as it will affect the quality of the dish.

Ingredients for the green garlic pickling method

    You add white vinegar, sugar, 2 tablespoons of salt, and 700ml of filtered water into a large pot. Stir well until the sugar is completely dissolved, then boil the mixture for 8 – 10 minutes.
