How to prepare Calamondin in honey

  • Prepare the ingredients

To make delicious calamondin in honey, you should choose slightly mature calamondin fruits, with shiny skin, pink flesh, fresh, ripe yellow, and thin skin.

Next, wash the calamondin thoroughly with water, then soak the calamondin in a little cooled boiled water mixed with salt for 30 minutes.

After that, take out the calamondin and dry them with a clean cloth, then slice the calamondin into thin round pieces.

Note: When preparing, you should keep the calamondin seeds without separating them!

Crush rock sugar, pour a layer of sugar into the jar, then a layer of lemons, 1 layer of sugar, 1 layer of lemons. Keep doing this until all the lemons are used up. Reserve some large sugar pieces to put on top.

Tip: Those who need to avoid sugar should consider adding less rock sugar or reducing the amount of sugar used in the infusion with honey and apricot lemon.

In the initial period of infusing, you should regularly check the infusion jar; if you notice bubbles on the surface after a few days, skim off this layer of foam. And make sure not to let the layer of lemons float above the layer of honey as it can easily lead to mold and scum.

After a long time, the apricot lemons and honey will blend and absorb into each other. The apricot lemons after infusion can be eaten like candied fruit, which is good for the throat and enhances health.

How to choose delicious fresh calamondin

  • To buy delicious fresh calamondin, you should choose ripe calamondin with smooth, shiny skin and a slightly yellow color.
  • Choose calamondin that is whole, looks juicy, fresh, with thin skin, and has a distinct aroma of calamondin when smelled.
  • You should not choose calamondin with bruises on the skin or black spots, as these are fruits that are about to spoil.
  • Also, avoid calamondin that has a pungent smell, as this may indicate the fruit has been sprayed with many chemicals.

Notes when soaking calamondin:

  • Limit the use of rock sugar; using too much rock sugar can damage teeth, accumulate excess fat, affect cardiovascular health, and is especially not good for people with diabetes, overweight, or obesity.
  • Do not use PET or PETE plastic jars when soaking calamondin honey. The acidity in calamondin will break down the plastic structures and create BPA, which is harmful to health.
  • You should buy honey from reputable places. You can check if your honey is real or fake by placing it in the freezer of the refrigerator. If the honey is thick like malt, it is real honey; if it shows signs of crystallizing at the bottom of the jar, it indicates that sugar has been added.
  • Do not soak too much calamondin, as calamondin soaked in honey is best used within 6 months to 1 year from the time of soaking.
