Instant noodles 1 pack Clams 500 gr Water spinach 100 gr (Stems part) Enoki mushrooms 100 gr Green onions 2 stalks Chili 2 pieces Red onion 2 bulbs Garlic 2 cloves Sesame oil 1 teaspoon Oyster sauce 1 teaspoon Annatto oil 5 teaspoons Common seasoning a little (Salt/ seasoning powder/ ground pepper)

How to choose fresh clams

  • You should choose clams that are still closed, not easily separable by hand, and have a sturdy, intact shell, as these are fresh clams.
  • Additionally, you should choose larger clams instead of smaller ones, as they feel quite firm when held because these clams usually taste sweeter and have more meat.
  • Avoid choosing clams with broken shells, that are no longer tightly closed, and especially those with an unusual foul smell, as these are dead clams and won’t taste good.

How to choose delicious, quality straw mushrooms

  • You should choose fresh straw mushrooms that are still firm, with a bean pod shape, bright white color, and a cap that looks quite sturdy.
  • Avoid choosing mushrooms that are bruised, have many black-brown spots, where the mushroom stem is separated, and feel slightly slimy to the touch as they may have been stored for too long.
  • Additionally, to avoid buying low-quality straw mushrooms, you should choose reputable places to buy mushrooms and check the expiration date carefully before purchasing.

How to prepare Clam Noodles

  • Prepare the clams

    Soak the clams in water for about 3-4 hours to let them release all sand and dirt. Then, rinse the clams with water and let them drain.

    • Method 1: Soak the clams in a mixture of water, salt, and a few slices of chili for about 2-3 hours. Then rinse with clean water and they are ready to be cooked.
    • Method 2: Soak the clams in water for about 2-3 hours, then briefly boil them in water with a little vinegar, stirring well while boiling to help the clams release all the sand.
    • Method 3: Dissolve 2 spoons of salt in 1 bowl of water, then add the clams along with 2 drops of cooking oil and soak for about 1 hour, then rinse and cook.

  • Prepare other ingredients

    For water spinach, remove the leaves, keeping the stems, then soak in diluted salt water for about 5 – 7 minutes to remove the sap and rinse thoroughly with water, then cut into pieces about 3 fingers long.

    Remove the roots of enoki mushrooms using a knife, soak in salt water for 10 minutes, then rinse several times with water and drain.

    Peel and wash the garlic and shallots, then mince them finely. Wash the green onions and chilies, then chop them small.

  • Blanching Noodles

    You put about 400ml of water into a pot, place it on the stove, and bring it to a boil over high heat.

    When the water boils, add the instant noodles and blanch for about 2 minutes, then remove and drain.

  • Making Stir-Fried Clam Noodles

    Put a pan on the stove, add 5 teaspoons of annatto oil, and heat it up. When the oil is hot, add minced garlic and onion to sauté until fragrant.

    Once the garlic and onion are golden and fragrant, add the clams, stir-frying until the clams are firm, then add 3 tablespoons of water, 1 teaspoon of seasoning, 1/2 teaspoon of ground pepper, and 1 tablespoon of oyster sauce, then stir-fry for another 3 to 5 minutes.

    When the clams open, add the chopped water spinach, turn the heat up high, and stir-fry for 1 to 2 minutes.

    Next, add the enoki mushrooms, season to taste, then add the blanched noodles along with chopped green onions and chili, stir-fry for about 1 more minute before turning off the heat.

    Scoop the stir-fried noodles onto a plate, garnish with a bit of green onion and chili on top, and it’s ready to enjoy.
