Prepare the ingredients
Peel the garlic and shallots, use a knife to cut off the roots, then wash and slice thinly. Remove the stem from the chili, rinse briefly with water, and slice small.
Remove the old and damaged leaves from the lettuce, then wash and drain, cutting into bite-sized pieces. Peel the cucumber slightly, wash it clean, and cut into bite-sized pieces.

Make the sauce
Gradually add to a bowl the chopped chili, 1 tablespoon of chili sauce, 1.5 tablespoons of ketchup, 1/2 teaspoon of monosodium glutamate, and 1 teaspoon of sugar.
Then, mix the mixture well to dissolve the seasonings.

Fry the noodles
Put a pan on the stove, add 1 tablespoon of cooking oil to the pan and turn the heat to medium. Wait for the oil to heat up, then add the finely chopped shallots and garlic to sauté until fragrant.
When you notice the shallots and garlic are fragrant and turn golden, reduce the heat, add the blanched noodles and the sauce to the pan, and mix well on the stove for about 1 minute so that the noodles absorb the sauce evenly. Adjust the seasoning to taste and then turn off the heat.
Transfer the noodles to a plate, adding a bit of lettuce and cucumber as a side.
Note: If you use other types of noodles (like Hao Hao, Gấu Đỏ, etc.), these noodles already have a salty taste, so when making the sauce, remember to adjust the seasoning to suit your taste! -

The noodles have a beautiful pink-red color, with a balance of sour, spicy, salty, and sweet flavors that are very pleasing to the palate.
