  • Stir-fry bamboo shoots

    Place a frying pan on the stove, add 1 tablespoon of cooking oil and heat over medium heat. Once the oil is hot, add all the remaining minced garlic and shallots to the pan, and sauté the mixture until fragrant.

    Then add the sour bamboo shoots, stir-fry continuously, reduce the heat, and season with 1 teaspoon of seasoning powder. Stir well for about another 5 minutes, then turn off the heat.

    Continue by placing the pot on the stove, add 1 tablespoon of cooking oil, and heat over medium heat. Once the oil is hot, add 1 tablespoon of sugar, and wait until the sugar turns a brown color before adding the meat, stirring continuously until the meat is seared.

    Next, add enough water to cover the meat, bring to a boil, then add 3 tablespoons of fish sauce, 1 tablespoon of sugar, cover the pot, and stew the meat for about 25 – 30 minutes.

    After the meat is cooked, turns brown, and absorbs the seasonings, add the sautéed sour bamboo shoots and chili, and stew for another 2 – 3 minutes, adjusting the seasoning to taste before turning off the heat.
