How to properly select freshwater crabs

  • When buying, you should pay attention to the color to identify freshwater crabs. Freshwater crabs will have a cloudy gray color, and their shells are usually bright and shiny.
  • Fresh crabs will run very quickly, and all legs and claws should be pointing upwards when you touch them.
  • You can press your finger into the crab’s belly; if bubbles form, that indicates the crab is fresh and delicious.
  • When purchasing, you can squeeze the inside part of the crab legs to check the firmness of the meat; if it feels indented, it means there is little meat, which is not tasty.

How to choose fresh loofah

  • You can identify fresh loofah by looking at the stem. If the stem has not dried out and is not darkened, it is a freshly picked fruit and still fresh.
  • Additionally, you should choose loofah that has good elasticity when pressed with your hand. Conversely, if the loofah feels soft and deflated, it means it has been stored for too long.
  • Absolutely do not buy fruits with dark spots on the skin, those that are too large, or those with slightly yellowish skin, as these are still immature and will not be crunchy and sweet when eaten.

How to make Crab Soup with Gourd

  • Prepare freshwater crabs

    After purchasing freshwater crabs, rinse them with clean water about 2 – 3 times to remove dirt.

    Next, you need to remove the shell and apron and continue to wash them thoroughly with water. For the crab fat, take it out and put it in a small bowl.

    Then, add the crabs and 300ml of filtered water into a blender, blend on high speed for about 3 minutes, and then use a sieve to filter out the crab water.

    You should filter it multiple times to ensure the crab water is not gritty with crab shells.

    Simple tips for preparing freshwater crabs:
    • Step 1: The best way to remove dirt is to soak the crabs in rice water for about 10 minutes. After that, rinse with clean water about 3 times.
    • Step 2: Take the crabs out and let them drain in a colander. Next, put the crabs in a bowl and place them in the freezer for about 15 – 20 minutes.
    • Step 3: Finally, proceed to remove the shell and apron of the crabs. Use a spoon to take out the crab fat and put it in a separate bowl.

    For the gourd, you peel it clean and wash it thoroughly, then use a knife to cut it into bite-sized pieces about 1/4 of a finger’s length thick.

    For the malabar spinach and water spinach, you pick the leaves and young shoots. After that, wash them clean and chop them into small pieces.

    After purchasing the butterfly pea flowers, you discard the damaged, spoiled, or tough parts, then wash them thoroughly and place them in a basket to drain.

  • Cook the gourd soup with crab

    First, you pour the blended crab water into a pot and place it on the stove to cook over high heat. When the water boils, you add the crab meat into the pot.

    Next, gradually add the gourd, malabar spinach, water spinach, and prepared butterfly pea flowers into the pot. Then, add 1 tablespoon of fish sauce, 1 teaspoon of salt into the pot, stir briefly and cook for about 3 – 5 minutes until the vegetables are cooked.

    Finally, you adjust the seasoning to your taste and then turn off the heat.
