How to make Scallop Satay

Pound the dried shrimp
Soak the dried shrimp in water until soft, then pound them well; you can also use a meat grinder or a blender for quicker and finer results!

Stir-fry scallops
You place a frying pan on the stove, wait for it to heat up, add 200g of scallop meat, and stir well until the scallops dry out.
Next, take the dried scallops and grind them into a fine paste.
Then, continue to stir-fry the ground scallops over high heat for another 15 minutes.

Make scallop satay chili
First, you add 2 cups of cooking oil to the pan, wait until the oil is hot, then add 1 cup of minced garlic. Wait until the garlic turns slightly golden, then add 1/2 cup of ground chili and 1 minced ginger root, stirring well over low heat for 20 minutes.
Next, you gradually add 10g of dried shrimp, the previously dried scallops, 1/2 cup of sugar, 2 tablespoons of oyster sauce, and 2 tablespoons of fish sauce to the pan, stirring gently for another 10 minutes to finish.
