How to Choose Fresh and Delicious Oyster Mushrooms

  • You should choose mushrooms with a firm stem, large cap, and a slight indentation at the top.
  • Preferably select mushrooms that grow in clusters, are fresh, and have a distinct mushroom aroma, as these are freshly harvested and will taste sweeter.
  • Avoid choosing wilted, soft mushrooms, those that show signs of sliminess, or lack the characteristic mushroom smell, as these have been stored for too long and will not have a good texture.

Note: You can buy ready-made soy milk that is sold at stalls or shops in the market; purchase canned soy milk at stores or supermarkets, or buy soybeans to cook at home to ensure hygiene.

How to Make Vegetarian Fried Eggs

  • Blend the soybean and milk mixture

    If you buy whole green beans, soak them in water for 5 – 6 hours, then remove the husks and rinse with water a few times and let them drain. If you buy pre-peeled green beans, you just need to soak them for about 1 – 2 hours to soften, then rinse with water and let drain.

    Add 100g of soft-soaked green beans and 200ml of soy milk into the blender and blend the mixture for about 3 – 5 minutes until smooth, then pour it into a bowl.

    Add 1/2 teaspoon of vegetarian seasoning and 1/4 teaspoon of pepper into the bowl, then mix well until the seasonings dissolve.

  • Sauté the mushrooms

    100g of gray oyster mushrooms, cut off the stems, wash with clean water, then drain and tear into bite-sized pieces.

    Put a pan on the stove, add 2 tablespoons of cooking oil, when the oil is hot, add 1 tablespoon of minced garlic and sauté until fragrant.

    When the garlic is aromatic, add the oyster mushrooms and sauté for about 5 minutes until the mushrooms are cooked and firm.

  • Fry the vegan eggs

    When the mushrooms are cooked, spread them evenly across the surface of the pan, pour about 4 tablespoons of the bean milk mixture to cover the entire surface of the pan.

    Then sprinkle about 1/4 teaspoon of pepper on top, then cover the lid and fry the eggs on low heat for about 5 minutes until the eggs are golden, then take them out onto a plate.

    Tip: You can add more soybean milk mixture if you want a thicker layer of fried eggs.

How to make Vegan Fried Eggs

  • Prepare the ingredients

    The cucumber you bought should have the ends cut off, wash it with clean water and let it drain. Next, cut the cucumber in half lengthwise, then slice it into thin pieces across the cucumber.

    Wash the lettuce thoroughly with several rinses of water and then let it drain.

    Soak 20g of peeled mung beans in water for about 2 – 3 hours until soft, then wash and let drain.

    Place a pot on the stove, add the soaked mung beans, then add enough water to cover the beans and cook over medium heat for about 20 minutes until the beans are soft.

  • Mix the vegan egg white

    Add 40g of batter mix and 100ml of unsweetened fresh milk into a bowl and stir well to combine the vegan egg white mixture.

    Tip: To make the vegan egg white fragrant and not burnt when frying, use unsweetened fresh milk instead of plain water to mix the batter!

    Add the cooked mung beans to a bowl, season with 1 teaspoon of vegan seasoning, 1 tablespoon of red palm oil, 1 tablespoon of crispy flour (about 8g), and 1 tablespoon of unsweetened milk (about 15ml).

    Then use your hands to mash the vegan yolk mixture until the mung beans are smooth and the seasoning is evenly absorbed.

    Place a pan on the stove and heat 4 tablespoons of cooking oil over medium heat. When the oil is hot, add 1 ladle of the egg white mixture.

    When the egg whites start to set, add 1 tablespoon of the yolk mixture in the center, and use a spoon to spread the yolk evenly. Then add about 1 tablespoon of egg white on top to cover the yolk.

    Flip the fried egg and fry for about 1 minute until the egg is cooked. Remove it and make similar fried eggs until all the ingredients are used up.

  • When picked up, they should feel firm, and you should select freshly harvested beans that have a natural aroma; they will cook softer and tastier.
  • For peeled mung beans, choose those that are bright yellow, smooth, and have a natural fragrance. The beans should be of uniform size, not crushed, and free from sand.
  • Avoid purchasing mung beans that have been stored for a long time, which have holes made by weevils; when cooked, these beans will be hard and not tasty.
