How to choose fresh ingredients
How to choose fresh pork bones
- You should choose bone strips that have a bright red-pink color, are fresh, and have no unusual blue-purple spots on the surface.
- Delicious bone strips usually have a thickness of about 2 – 3 finger joints and should not have any unpleasant smell when sniffed.
- At the same time, you should check the cuts of the bone strips, and choose those with a dry surface, not slimy; if this phenomenon appears, you should definitely not buy them.
How to choose fresh potatoes
- Good potatoes usually have a bright yellow skin and a smooth, shiny surface.
- You should choose potatoes that feel firm, heavy, with no damage or bruises on the surface.
- Also, do not choose potatoes that have sprouted and are turning green, as these can easily cause poisoning when consumed, and are not safe.
How to choose fresh carrots
- You should buy carrots that are bright orange, with a smooth and shiny skin, and without any unusual black spots.
- Prioritize choosing carrots with fresh green tops that are firmly attached to the carrot body.
- Additionally, you should also choose carrots that are slender, well-proportioned, not too large but also not too small.
How to choose fresh and delicious chayote
- You should select fruits that are bright green, with many tiny spikes on the surface, as this is a sign that they are still young, making them softer and tastier when eaten.
- You can also check by pressing; if the chayote is soft when pressed, it is still young and you should buy it, whereas if it feels a bit firm and chewy, you should avoid it.
- You should not choose fruits with black spots on the surface, that are soft to the touch, or have signs of scratches and bruising.

Prepare the ingredients
To remove the smell of pork bones, wash them with diluted salt water and then rinse briefly with cold water. Next, prepare a pot of water, add the pork bones and cook until the water boils. Remove the pork bones, rinse with water, and let drain.
Tip: Blanching the pork bones beforehand will help eliminate their smell and also make the soup clearer.Peel the potatoes, wash them with diluted salt water, and then rinse with cold water, then cut into bite-sized cubes.
Peel the carrots and chayote, wash them clean, and cut them into cubes.
Peel the shallots, wash them to remove dirt, and then chop finely.
-
Cook the soup
Place a pot on the stove, add 1 tablespoon of cooking oil, wait for the oil to heat up, then add finely chopped shallots, stir until fragrant, then add the pork bones, stirring for about 1 minute.
Since carrots take the longest to cook, add the chopped carrots first, stir with the pork bones on the stove for about 3 minutes.
After 3 minutes, add about 1 liter of water to the pot, wait for the water to boil, then add all the prepared chayote and potatoes, and season with 1 tablespoon of salt, 1 teaspoon of seasoning powder, and 1 teaspoon of pepper.
Adjust to medium heat, cook for about 20 minutes, add 1 teaspoon of fish sauce, and taste to suit your family’s preference before turning off the stove.
Tip: If you want your soup to be more visually appealing and fragrant, you can add a little chopped green onion to the pot after turning off the stove. -
Final Product
The vegetable soup with bones has the natural sweetness of various vegetables, with clear broth that is not cloudy thanks to blanching the bones before cooking, and the meat on the bones is tender and just right to eat.
The soup is very easy to eat, suitable for meals in the summer, full of nutrients and extremely refreshing.
