Cut off the roots of the mustard greens, cut into pieces about 2 finger lengths, keeping the leaves separate from the stems, wash clean with water, and drain.
Trim the edges of the green beans on both sides, then wash them clean, use a knife to cut them diagonally into pieces about 1 finger length.
