  • To buy good green beans, you should choose those with green stems that look fresh. Good green beans are usually long, flat, and not lumpy. If there are many bumps, it means the beans inside are large and the beans are old.
  • You should not choose green beans that look too beautiful, such as shiny, smooth, with few hairs, and no clear pest damage. Because they may have been sprayed with a lot of pesticides, and the remaining residues are extremely harmful to health.

How to choose fresh straw mushrooms

  • When buying straw mushrooms, pay attention to choose those that are intact, not bruised, have the characteristic aroma of mushrooms, are round in shape, and still have buds. You should not choose mushrooms that have large caps and a foul smell.
  • Black straw mushrooms usually have a richer flavor and aroma than white straw mushrooms. When touched and gently squeezed, the mushrooms feel slightly firm.

  • Prepare the vegetables

    500g of straw mushrooms, after buying, clean the mushroom stems, then soak in diluted salt water for about 7 – 10 minutes and then rinse with clean water. After that, cut the mushrooms in half, into thirds, or quarters depending on the size of the mushrooms.

    Cut off the roots of the mustard greens, cut into pieces about 2 finger lengths, keeping the leaves separate from the stems, wash clean with water, and drain.

    Trim the edges of the green beans on both sides, then wash them clean, use a knife to cut them diagonally into pieces about 1 finger length.

    Wash 3 sprigs of cilantro and chop finely. Wash 2 scallions and chop them small.

  • Fry the tofu

    Put a pan on the stove, add 150ml of cooking oil, wait for the oil to heat up, then add each piece of tofu to fry until golden and crispy over medium heat.

    After that, take it out to drain the oil and use a knife to cut it into thin slices for serving.

  • Sauté vegetables

    Put a pan on the stove, add 1 tablespoon of cooking oil, wait for the oil to heat up, then add 2 stalks of spring onions to sauté until fragrant, then add 300g of green beans and stir for about 2 minutes, then add 500g of straw mushrooms and stir well.

    Sauté for about 8 minutes over medium heat until the beans and mushrooms are almost cooked, then add 300g of bok choy and stir for another 5 minutes until the vegetables are just cooked, then add the fried tofu, season with 1/2 tablespoon of soy sauce, and 1 teaspoon of monosodium glutamate, stir well, then turn off the heat. Serve the vegetables on a plate.

    In the same pan, add 1 tablespoon of cooking oil, wait for the oil to heat up, then add 300g of rice noodles and stir-fry until soft for about 6 minutes.

    Then add the stir-fried vegetables, mix well, adjust the seasoning to taste, and add cilantro, then turn off the heat to finish.

    Place the stir-fried rice noodles on a plate, drizzle with a bit of soy sauce, and enjoy right away; this dish is especially delicious when hot.

    The rice noodles are soft with a light aroma of vegetables and cilantro. The green beans are just cooked enough to retain their crunch, the sweet mustard greens are fragrant, and the straw mushrooms are tender and delicious, all evenly infused with seasonings.
