How to choose fresh ingredients

How to choose fresh chicken eggs

  • You should choose chicken eggs with dark brown shells, without any black spots. When you touch the surface, if it feels rough and slightly bumpy, then those are fresh chicken eggs.
  • In addition, you can also check the freshness of the eggs by holding them under a light; if the yolk is round and doesn’t move, has an orange or light pink color, and the white is clear, then those are fresh chicken eggs.
  • Avoid choosing eggs that are pale in color, have many black spots, and feel smooth to the touch because these are eggs that have been stored for too long and are no longer fresh and tasty.

How to make Sponge Cake with Shrimp Sauce

  • Whip the eggs

    First, you will separate 10 chicken eggs into yolks and egg whites in 2 different bowls.

    Then, add 180g of sugar to the egg whites and use a mixer to whip at the highest speed until stiff peaks form.

    Next, add 100g of cornstarch, 100g of flour, 100ml of sweet milk, 100ml of cooking oil, and 5g of vanilla powder to the egg yolks, and stir well in one direction to create a homogeneous mixture and minimize air bubbles.

  • Pour into the mold and bake the cake

    First, you will add about 1/3 of the egg yolk mixture into the bowl of whipped egg whites and use a whisk to mix them thoroughly until the mixture is completely combined.

    Then, you will add the entire mixture from the bowl of egg yolks into the egg whites, stir gently, then pour into the mold and take it to bake.

    Before baking the cake, you will preheat the oven for about 10 minutes at a temperature of 150 degrees Celsius. Then place the cake in the oven and bake for 55 minutes at a temperature of 145 degrees Celsius.

    When baking is done, you lift the mold about 20cm and drop it to release air, then invert it onto a rack to cool.

  • Make egg oil sauce

    You add 30gr of sugar, 1 teaspoon of salt with 2 egg yolks into a bowl and beat well using the double boiling method for about 10 – 15 minutes until the eggs turn a light yellow color.

    Then, you will add oil to the mixture one spoon at a time and use a hand mixer to beat until the oil is completely blended with the eggs before adding the next spoonful of oil. You will do the same until you finish 200ml of cooking oil!

    During the process of making the egg oil sauce, you don’t have to use up all the oil, but rather add and stir until the sauce reaches the desired thickness.

  • Completion

    You will divide the sponge cake into 2 layers and spread the sauce evenly on all sides of the cake to make it softer and tastier. Then, on the top layer of sauce, you will add some shrimp floss, and you have completed the delicious sponge cake with shrimp sauce!
