Smoked sausage 500 gr (10 pieces) Smoked pork belly 200 gr Chicken bones 200 gr Kimchi 50 gr Bell peppers 4 pieces Korean chili powder 1/2 teaspoon Napa cabbage 100 gr Green onions 50 gr Onion 50 gr Zucchini 100 gr Enoki mushrooms 50 gr Common seasoning a little (salt/ pepper/ seasoning powder/ sugar)

How to choose good chicken bones

  • Fresh chicken bones will have a pinkish-red color, not pale, bruised, or have any unusual smell.
  • You should choose chicken bones that are about the size of 2 – 3 finger joints because bones that are too large will make the broth taste bad, while bones that are too small may be from sick or weak chickens.
  • If buying frozen chicken bones, you should choose to buy from reputable establishments or supermarkets and check the origin and expiration date carefully.

How to choose fresh Napa cabbage

  • Fresh Napa cabbage will have a fresh white stem and pale green leaves. The leaves are thin and not too rough or have tiny spots as if eaten by pests.
  • It is advisable to buy cabbages of moderate size, which feel firm to the touch, and the leaves stick tightly together.
  • You should avoid choosing cabbages that are yellowing or too dark green, as these cabbages are old, lacking sweetness, crunchiness, and have lost some nutrients.

  • Good zucchini will have a moderate green color that is not too flashy, with a fresh stem, shiny skin, and no bruises or scratches.
  • You should choose zucchini that is straight, feels firm and hard to the touch, not soft.

How to Make Kimchi Sausage Hotpot

  • Prepare Ingredients

    With 500g (10 pieces) of smoked sausage, cut it diagonally into bite-sized pieces, and cut 200g of smoked pork belly into halves.

    Separate the napa cabbage leaves, trim the roots from the green onions, cut off the ends of the zucchini, then soak in salt water and rinse clean. Next, cut the napa cabbage into bite-sized pieces, halve the zucchini and slice it into small pieces, and chop the green onions finely.

    Trim the stems of the enoki mushrooms and soak them in diluted salt water, then rinse with cold water and drain.

    Peel the onion and slice it thinly lengthwise. Remove the stems from the chili peppers and wash them clean.

  • Cook Chicken Bone Broth

    Add 1.5 liters of filtered water, 200g of chicken bones, and 1/2 teaspoon of salt into a pot and simmer the bones for about 30 minutes over medium-low heat to extract the sweetness.

    After 30 minutes, remove the chicken bones.

    Note: During the cooking process, remember to skim off the foam frequently to keep the broth clear.

  • Cooking the hot pot broth

    Continue to add 50g of kimchi, zucchini, and prepped onion into the pot and cook until boiling, then add the chopped bacon. Simmer over medium heat for about 10 minutes until the zucchini and onion are soft.

  • Season and finish

    Add 1/2 teaspoon of seasoning, 2 teaspoons of sugar, 1/2 teaspoon of Korean chili powder, and 1/2 teaspoon of pepper into the hot pot and stir well.

    Then, add chopped scallions, bell peppers, and enoki mushrooms into the pot and cook for about 5 minutes until boiling. Finally, add the sausages into the hot pot and add napa cabbage, then simmer for another 5 – 7 minutes before serving.

  • Prepare the hot pot sauce

    You prepare the hot pot sauce by adding into a bowl 2 tablespoons of Korean chili powder, 2 tablespoons of minced garlic, 2 tablespoons of soy sauce, and 2 tablespoons of cooking wine, then use a spoon to mix well.

    Add into a pot in order 1/2 bunch (about 500g) of kimchi, 2 cans of Spam, 1 can (280g) of tofu, 4 slices of smoked pork belly, and 500g of smoked sausage.

    Continue to add 600ml of beef bone broth and the prepared hot pot sauce, stir for the sauce to dissolve, then cook over medium heat until the hot pot boils vigorously.

    When the ingredients are cooked, sprinkle a handful of finely chopped green onions on top and you can enjoy it right away.

    Tip:
    • If you don’t have beef bone broth, you can simmer broth using kelp and dried anchovies!
    • Another simpler way is to use clean water and season it to your taste.
