Jelly powder 25 gr Cheese 4 pieces Coffee powder 30 gr Butterfly pea flower 10 gr Pandan leaves 5 sprigs Purple sweet potato leaves 20 gr Coconut milk 30 gr Vanilla 1 tube (about 2.5gr) Salt A pinch Sugar 400 gr

How to make Mooncake with jelly and cheese filling

  • Cook the jelly powder

    Prepare a large pot, add 1.5 liters of water along with 25 grams of jelly powder. Then, use a ladle to stir well so that the powder dissolves and soak for 30 minutes.

    After 30 minutes, place the pot on the stove and continue to stir until the mixture boils. When the jelly water starts to boil gently, add 400 grams of sugar, a little salt, and stir well for another 20 minutes.

    Finally, add about 1 vanilla tube, stir well, and turn off the heat.

    Note: While cooking the jelly, remember to frequently skim the foam on the surface to keep the jelly water clearer!

  • Mixing Colors

    When buying butterfly pea flowers, wash them thoroughly with water and boil them in a pot for 15 minutes with about 100ml of water. After that, remove the pot, strain the water to extract the butterfly pea flower essence.

    Pandan leaves should also be washed thoroughly and cut into pieces. Then, put the pandan leaves into a mortar to pound or blender with 100ml of water. Next, pour the pandan mixture through a sieve to extract the juice.

    Wash the butterfly pea flowers and boil them with 100ml of water. When the water boils, turn off the heat and strain to get the essence.

    For coffee, you will brew it with 30g of coffee powder to extract the essence for the jelly.

    After completing all the above steps to obtain pure color essence, you will proceed to mix colors.

    You need to mix colors in a ratio of 2:1, which includes 2 ladles of jelly mixture and 1 ladle of essence. Continue mixing until you have finished all 5 colors.

    Tip:
    • In addition to the 4 colors mentioned, you can also change to different colors (beetroot juice, fruit juice,…) according to your preferences.
    • Additionally, for quicker and more convenient preparation, you can mix jelly colors using food coloring at a ratio of 2 ladles of jelly mixture and 3 – 4 drops of food coloring.

  • Pouring the jelly mold for the first time

    You need to prepare 4 mooncake molds in advance. Then, pour each layer of jelly in your preferred color in order until the mold is filled to 1/2.

    After each pour, wait for 1 – 2 minutes for the jelly to thicken before pouring the next layer so that the colors do not mix together.

    After the first 1/2 of the jelly mold has set, use a toothpick to poke the surface of the cake so that the next layer of jelly will not separate.

    Place 4 pieces of cheese into the 4 molds and continue to pour the remaining layers of jelly until the molds are full.

    Note: If the jelly mixture cools while pouring, you can put it on the stove to boil and heat it for about 5 minutes before continuing to pour as usual.

  • You should choose dragon fruits with a uniformly deep red outer skin, no blemishes, large and round, with smooth and shiny skin. Smelling the fruit will reveal a light, characteristic fragrance.
  • Delicious, sweet, and ripe dragon fruits will have a stem and ear that are bright green, firm yet tender and flexible. Additionally, you can gently press the fruit with your hand to feel its elasticity; if the fruit is moderately soft and has a slight bounce, it indicates that the flesh is good.
  • Avoid choosing dragon fruits that have a strong fermented smell or those that are too soft to the touch or still hard, as these are fruits that are not yet ripe.

  • Cook the jelly powder

    First, mix 100g of white sugar and 5g of jelly powder in a bowl and stir the mixture well.

    Then, place the bowl of mixture into a pot with 200ml of water, stir well, and let it rest for about 30 minutes.

    Next, put the jelly mixture on the stove to boil and continuously stir with a chopstick.

    When the jelly starts to boil, reduce the heat and let it simmer for an additional 2 – 3 minutes to make the jelly clearer. Then, add the dragon fruit juice and stir well, skimming off any foam from the surface to make the jelly clearer, and turn off the heat.

    After turning off the heat, add 1 vanilla stick into the pot to create a pleasant aroma for the cake.
