How to choose good white sticky rice

  • Good sticky rice will have a cloudy white color, large, round grains, and when tasted, you will feel a light sweetness.
  • Good sticky rice will emit a faint sweet aroma when you break a grain.
  • Avoid purchasing sticky rice grains that have strange smells, are broken, dusty, have fuzz, or have turned yellow. This indicates that the rice has been stored for too long and will not taste good.

How to make Black Bean Sticky Rice – White Sticky Rice

  • Wash thoroughly, soak black beans and sticky rice

    Wash the black beans 2 times in clean water, then put them in a bowl and soak in water for about 3 hours to allow the black beans to swell and soften.

    The sticky rice should also be washed 2 times with water, then put into a pot and soaked for about 1 – 2 hours to let the sticky rice expand.

  • Cook coconut cream

    First, you add 1 tablespoon of tapioca starch and 2 tablespoons of warm water into a bowl, stir well until the tapioca starch dissolves completely.

    Add 300ml of coconut cream along with 1/2 teaspoon of salt and 10 grams of sugar into the pot. Stir continuously over medium heat for about 2 minutes until the salt and sugar dissolve, then stop.

    Continue to cook for about 3 minutes until the coconut cream boils, then add the tapioca water, stirring continuously to mix the tapioca water with the coconut cream. Cook for another minute until the mixture boils again, then turn off the heat.

  • Softening black beans and sticky rice

    After soaking the black beans, you drain and rinse them with water, then put them in a pot with 1 liter of water, cooking over medium heat for about 20 minutes until the beans are soft, then turn off the heat and transfer the beans to a bowl.

    Next, add 200g of sugar to the bowl containing the black beans, mix well to coat the beans evenly with the sugar and let it marinate for about 15 – 20 minutes.

    After soaking, the sticky rice expands, you put it in a pot with 800ml of water and simmer for about 15 minutes until the sticky rice is soft.

    Tip:
    • To check if the beans are soft, you can gently squeeze a bean with your fingers. If the bean is easy to squeeze, it is soft.
    • To prevent the sticky rice from burning at the bottom of the pot, you should frequently stir it with chopsticks while cooking!

  • Mix black beans with sticky rice

    After the sticky rice has cooked soft, add the remaining 190g of sugar and the marinated black beans, mix well, and cook for another 15 minutes on low heat before adding 1 tube of vanilla.

    Stir well to ensure the vanilla is evenly mixed in the dessert, then turn off the heat, scoop into bowls, and drizzle 1 tablespoon of coconut milk on top to finish.

    Tip:
    • To prevent the dessert from burning at the bottom of the pot, you should stir it regularly.
    • To make the dessert more delicious, you can adjust the amount of sugar to your taste!

  • Prepare the ingredients

    Purple sticky rice and white sticky rice should be rinsed twice with water after purchase and soaked for about 30 minutes to allow the rice grains to expand.

    Clean the black beans, soak them in water for about 3 hours until the beans are soft, then drain and cook with 500ml of water over medium heat for about 15 minutes until the beans are cooked, then turn off the heat.

    For the young coconut, use a knife to peel off the outer layer, then cut and pry the lid off, discarding the water. Use a spoon to scoop out the meat from one coconut, while leaving the other two intact.

    Tip: To save time, you should ask the coconut seller where you buy them to peel and pry the lid off for you!
