Chicken eggs 5 Black tea 20 gr Jujube 30 gr Goji berries 10 gr Longan 30 gr Rock sugar 80 gr Filtered water 1.5 liters

How to choose fresh, clean, and safe chicken eggs

  • Free-range chicken eggs usually have a light pinkish-white color. Freshly laid eggs will have a thin layer of powder on the shell’s surface. When held up to the light, the pinkish color of the egg is very noticeable.
  • The surface of free-range chicken eggs is also smooth and shiny. When held in hand, they feel small but firm.
  • Industrial eggs or fake free-range chicken eggs have larger air holes on the surface. Industrial eggs tend to be lighter in color and have a darker pink shade. When held, they feel fragile and spongy. The shells are very clean and uniformly “identical,” and they are notably larger than free-range chicken eggs.
  • Avoid choosing eggs with overly smooth shells that feel like they have cracks, as these are often stored for quite a long time before sale.

How to Make Egg Tea

  • Boil the eggs

    Put a pot on the stove, add enough water to cover the eggs, bring the water to a boil, and add 5 eggs to boil on medium heat for about 10 minutes, then turn off the heat.

    When the eggs are cooked, take them out and place them in a bowl of cold water to make peeling easier.

    When the eggs cool down a bit, peel them and set them aside.

    Note: You should boil the eggs just right, otherwise they will be hard while cooking with tea.

  • Make the tea

    Add 1.5 liters of water to the pot and bring it to a boil over high heat, when the water boils, add 20g of black tea, reduce the heat and let it simmer. Cook the tea for about 5 more minutes, then turn off the heat.

    Continue to cover the pot and let the tea steep for another 20 minutes for a stronger flavor. Then strain the tea through a strainer to remove the tea leaves.

    Tea water is poured into a large pot, add 80gr of rock sugar. Use a spoon to stir until the sugar dissolves, then add 5 peeled eggs. Turn on the stove, simmer on low heat for about 1 hour.

    After cooking with black tea for 1 hour, the eggs have an attractive dark brown color, continue to add 30gr of jujube, 30gr of longan, and 10gr of goji berries into the pot.

    Cover the pot and simmer on low heat for an additional 30 minutes.
