- Free-range chicken eggs usually have a light pinkish-white color. Freshly laid eggs will have a thin layer of powder on the shell’s surface. When held up to the light, the pinkish color of the egg is very noticeable.

How to Make Egg Tea

Boil the eggs
Put a pot on the stove, add enough water to cover the eggs, bring the water to a boil, and add 5 eggs to boil on medium heat for about 10 minutes, then turn off the heat.
When the eggs are cooked, take them out and place them in a bowl of cold water to make peeling easier.
When the eggs cool down a bit, peel them and set them aside.

Make the tea
Add 1.5 liters of water to the pot and bring it to a boil over high heat, when the water boils, add 20g of black tea, reduce the heat and let it simmer. Cook the tea for about 5 more minutes, then turn off the heat.
Continue to cover the pot and let the tea steep for another 20 minutes for a stronger flavor. Then strain the tea through a strainer to remove the tea leaves.

Tea water is poured into a large pot, add 80gr of rock sugar. Use a spoon to stir until the sugar dissolves, then add 5 peeled eggs. Turn on the stove, simmer on low heat for about 1 hour.
After cooking with black tea for 1 hour, the eggs have an attractive dark brown color, continue to add 30gr of jujube, 30gr of longan, and 10gr of goji berries into the pot.
Cover the pot and simmer on low heat for an additional 30 minutes.
