Ingredients for Snow Fungus Papaya Dessert Serves 3

Papaya 1 fruit Mung beans 50 gr Snow fungus 1/2 stick Goji berries 15 gr Black dates 4 fruits Red dates 4 fruits Pandan leaves 5 leaves Rock sugar 100 gr

How to choose fresh and delicious papaya

  • For this dessert, you should choose papayas that are just ripe, still firm and not too soft.
  • Choose fruits that feel heavy to the touch, ripen evenly, and have a stem that still has latex because this indicates less seeds, thick flesh, and sweet aroma.
  • The best papaya is the two-skin type because the inside is quite dense, this type will have a yellow outer skin with small green speckles, and the fruit is elongated.
  • Avoid buying papayas if it has rained a few days prior because the fruit will taste bland.

You can buy goji berries, jujubes, and snow fungus at herbal medicine shops, supermarkets, grocery stores, or on e-commerce websites. Many products are packaged in a bag that includes a variety with a suitable amount for cooking, making it easy for you to choose.

How to make Papaya dessert

  • Prepare the ingredients

    Peel the papaya, wash it clean. Then, cut the papaya into bite-sized pieces.

    Soak the mung beans, snow fungus, goji berries, and 2 types of jujubes in water for 1 hour. After that, trim the ends of the snow fungus and cut it into small pieces.

  • Cook pandan leaves

    Place a pot on the stove, tie the pandan leaves neatly and put them in to boil for 3 minutes, then remove.

    Add mung beans, jujubes, goji berries to the pot, cover the lid, and boil for 15 minutes on low heat.

    When the dessert boils for 15 minutes, add the snow fungus and papaya, then boil for another 5 minutes.

    After that, add 100g of rock sugar, and boil for another 3 minutes.

    Finally, add 1 tube of vanilla, stir well one more time, taste for sweetness, and then turn off the heat.
