How to choose fresh and delicious frog meat
- You should choose live frogs, with large, even sizes, brown-yellow skin, and when pressed, they should have good elasticity and firmness.
- You can rely on the following characteristics to select tasty frogs: a slim head, bright eyes, strong limbs, bright yellow or black-spotted skin, white or slightly yellowish belly,…
- Avoid buying frozen frogs or those that have been pre-processed, with unpleasant odors, as these are low-quality frog meat, which does not ensure freshness and nutrition when cooked.
How to prepare Frog Curry

Preparing the frogs
For the frog thighs you bought, clean the black veins on the thighs, wash the frogs with salted water mixed with vinegar, and rinse with clean water, then let them drain.
Tips for cleaning frogs properly, without fishy smellStep 1: Cut off the head, skin, internal organs, backbone, veins, and blood vessels on the frog thighs.
Step 2: Clean the frogs in two ways:
- Method 1: Use alcohol and ginger to wash the frogs to kill bacteria and eliminate the fishy smell of the frogs.
- Method 2: Use vinegar and salt to wash the frogs, which has a similar effect to method 1 but is less effective.
Step 3: Blanch the frog meat in a mixture of alcohol, ginger, and turmeric powder to finish.
After draining the frog meat, marinate it with 1 tablespoon of minced garlic and onion, 1 tablespoon of seasoning powder, 1 tablespoon of sugar, 1 teaspoon of salt, 1/2 teaspoon of five-spice powder, 1/2 tablespoon of curry powder, 1 tablespoon of cooking oil, and 1 tablespoon of cooking wine.
Mix well for the ingredients to blend together, then marinate for about 30 minutes for the frog meat to absorb the seasoning.
Tip: Marinating frog meat with wine will make the dish more fragrant and effectively eliminate unpleasant odors. -
Cook frog curry
Add 1 tablespoon of cooking oil to the pot, wait until the oil is hot, then add the marinated frog legs and fry until the meat is firm. After frying all sides of the frog, add 700 ml of water (or fresh coconut water) and cook for about 15 minutes.
After 15 minutes, when the frog meat is tender, add 1/2 of the coconut milk. Next, mix 3 tablespoons of water with 2 tablespoons of cornstarch, then add the cornstarch mixture in and bring to a boil.
Then, season with 1 tablespoon of sugar, 1/2 tablespoon of seasoning powder, and 1 teaspoon of ground pepper. You can adjust the seasoning according to your taste.
Continue to boil the frog curry for about 5 – 10 more minutes, then turn off the stove to finish.
Tip: Frog meat cooks very quickly, so be careful to cook on low heat and do not cook too long to avoid the meat becoming mushy. -
Prepare other ingredients
The completed frog curry has an attractive eye-catching color, tender sweet frog meat, soaking in flavor, rich and blended with sweet broth, fragrant with curry that will surely make you fall in love!

How to choose good frog meat
- Choose frogs that look healthy, with no bruises, not wrinkled or rough. Fresh frog meat usually has a light pink color and is firm.
- Fresh frog meat should not have a foul smell. If you detect an unpleasant odor or a loss of natural scent, avoid buying it.
- Gently press on the frog meat; if it quickly returns to its original shape, it is fresh. If the meat lacks elasticity, it may be a sign that it has oxidized and is no longer fresh.
