How to choose fresh ingredients
How to choose fresh beef
- When choosing beef, you should select pieces that are bright red, with white marbling and fresh yellow fat.
- Press the beef piece with your hand to check if it has good elasticity; it should not feel sticky and should not have any unusual smell.
- Avoid choosing pieces of meat that are pale green or dark red, with dark yellow fat, and that feel mushy or slimy to the touch, as the meat quality is not guaranteed and may affect the health of the consumer.
How to choose delicious potatoes that are not waxy
- When buying potatoes, it is important to choose those with a yellow color to ensure sweetness, taste, and high nutritional value.
- Avoid selecting potatoes that have sprouted or have turned green on the outside, as these can be very toxic and harmful to health, even leading to death.
- It is best to buy potatoes that feel firm in hand, have smooth and intact skin, and show no abnormal signs such as black spots, insects, or rot.
How to choose delicious, quality carrots
- When buying carrots, make sure to choose those of moderate size, upright shape, and smooth outer skin.
- Good carrots usually have a bright color, feel firm in hand, and have a small core. These are the tastiest carrots, with a certain crispness and sweetness.
- Avoid selecting oversized carrots, those with large cores, or ones that are misshapen, cracked, or bruised.
How to choose delicious sweet potatoes
- Choose sweet potatoes that are intact, without cracks or chips. When handled, they should feel heavy, firm, and not bruised.
- Be cautious if the sweet potatoes have black spots or are pitted, as this indicates they are spoiled.
- Select sweet potatoes that are round or elongated without indentations; when pressed lightly, they should not be too hard. These varieties tend to have less fiber, more starch, and are very sweet.
- Avoid choosing very small, long, or indented sweet potatoes, as they will likely have more fiber.
How to prepare Beef Curry
-
Prepare the ingredients
Carrots, potatoes, sweet potatoes, and onions should be washed clean with water, then peeled and cut into bite-sized pieces about 1.5 finger lengths; you can carve flowers as you like.
For lemongrass, cut off the roots, wash it clean, then crush it; you can cut it into pieces or leave it whole as you prefer.
Wash the beef with clean water and cut it into bite-sized pieces about 1 finger length.
Tip:- To prevent potatoes from turning brown after peeling, you can soak the cut potatoes in water.
- To eliminate the smell of beef while still retaining its nutrients, you can try using a clean, damp cloth to wipe the meat once or rubbing it with crushed ginger.

-
Marinate the beef
Marinate the beef with 1/2 spoon of cooking oil, 1/2 spoon of salt, 1 spoon of curry oil, and 1 spoon of curry powder.
Mix well and let it marinate for about 15 – 30 minutes for the meat to absorb the spices.
-
Stir-fry the ingredients
Place a pot on the stove, when the pot is hot, add 1.5 spoons of cooking oil and put the marinated beef in, stir-fry over medium heat for about 3 minutes until the meat starts to change color and firm up, then take the meat out.
Next, in the pot where you stir-fried the beef, add lemongrass and stir-fry until fragrant, then add 1 spoon of curry oil, potatoes, carrots, sweet potatoes, and onions, and stir-fry for 3 minutes.
-
Cook the curry
Add 300ml of coconut milk, 250ml of water, 1 spoon of seasoning powder, and the stir-fried beef into the pot and cook for about 3 minutes.
Stir well, wait for it to boil, then cover, reduce the heat, and simmer for 30 minutes. Finally, add 1 spoon of sugar, taste and adjust seasoning to your liking, and it’s done!

Finished Product
The finished beef curry looks very eye-catching, steaming hot with the distinctive aroma of curry, a rich broth flavor, sweet and refreshing from the vegetables combined with each chewy piece of beef that absorbs the right amount of seasoning.
