  • You should buy mung beans that are evenly green, without speckles or any unusual colors on the surface of the beans.
  • At the same time, good mung beans are those that are of uniform size, with no significant differences in size. Especially, when you gently press your nail into a bean, it should feel firm, not easily crumbling.

How to Make Green Bean Fish Porridge

  • Prepare Rice and Green Beans

    First, rinse the rice with water 1 – 2 times to remove all the dirt, then drain the water.

    Next, take a bowl and add 150g of green beans and 200ml of water, soak the green beans for 2 – 3 hours until they are soft.

    Then, prepare the blender and add all the rinsed rice and green beans along with 100ml of water, blend at medium speed for about 1 – 2 minutes until the mixture is slightly smooth.

    Tip: To save time and help the porridge expand faster, you can soak the rice for about 15 minutes before cooking!

  • Preparation and steaming of fish

    For the fish, you need to cut off the gills and head, while using a knife to make a cut along the belly of the fish, and proceed to remove the guts and any remaining blood inside.

    Next, take some salt and rub it on the surface of the fish for 3 – 5 minutes, then rinse it several times with clean water and let it drain. Finally, use a knife to cut it into bite-sized pieces.

    After preparing the fish, place a pot on the stove with 200ml of water, then put the steaming rack and 500gr of fish into it, steaming over medium heat for about 15 – 20 minutes, until the fish is cooked. Then turn off the heat, transfer it to a bowl, and proceed to remove the bones, retaining only the meat.

    Tip: To eliminate the fishy smell, you can add a few cleaned sprigs of cilantro and dill, including the roots, while steaming!

  • Marinating and Stir-frying Fish

    Once you have removed the bones, use that bowl to marinate 2 teaspoons of seasoning, 1/3 teaspoon of ground pepper, and 1 teaspoon of fish sauce, using chopsticks to mix well so that the fish absorbs the seasoning for about 15 minutes.

    Next, place a pan on the stove with 2 tablespoons of cooking oil over medium heat. When the oil is hot, add the marinated fish and 2 teaspoons of soy sauce, and stir-fry evenly for about 10 – 13 minutes, until the fish starts to firm up. Then, season to taste, and turn off the heat to transfer to a plate.

    Using the pot you boiled the fish in earlier, continue to add 1.5 liters of water and place it on the stove to cook over medium heat for about 10 minutes.

    When the water starts to boil gently, add 2 teaspoons of seasoning along with all the rice and ground green beans, stirring with a ladle to prevent the porridge from clumping, and then cook for about 25 – 30 minutes.

    Finally, when the porridge has thickened and smoothed out, add half of the stir-fried fish, stir well, and cook for another 5 minutes, then season to taste, and turn off the heat to serve in a bowl along with the remaining fish!

  • The most common method is to use lemon juice mixed with warm water to soak the fish for 5 – 7 minutes, and the fishy smell will disappear immediately.
  • Proceed to soak the fish in diluted salt water for 5 – 10 minutes or rub salt onto the fish’s body, which not only eliminates the smell but also effectively removes the slime.
  • Additionally, one cannot overlook soaking the fish for 15 – 20 minutes in rice water.
