How to choose fresh and delicious beef

  • Fresh and delicious beef usually does not have a dark red color but will be bright red, fat is yellow, the meat fibers are small, and when pressed, it is soft and does not stick to the hand. There should be no unpleasant odor when smelling.
  • Avoid buying beef that has a pale green color, with white spots like rice on the meat fibers as it may be infected with harmful parasites. Additionally, the fat should not be dark yellow, and if the meat is slimy and sticks to the hand when pressed, it is not good beef.

  • Prepare the ingredients

    Wash the beef thoroughly and cut it into bite-sized pieces.

    Tip: To prevent the beef in this soup from having a strong smell, place the beef in a pot of cold water and then bring it to a boil (do not add the beef to boiling water). When the beef is slightly cooked, it will reduce the beef’s odor.

    Cut off the ends of the enoki mushrooms and rinse them with clean water.

    Chop the green onions finely after cutting off the roots.

  • Sauté the beef

    Add 2 teaspoons of cooking oil to the pot, and when the oil is hot, add 1 teaspoon of minced garlic to sauté until fragrant. Then add 300g of cleaned beef and stir-fry until the beef is slightly cooked.

    Tip: Sautéing the beef will help the meat become more succulent, firm, and absorb the seasoning better.

    The beef is stir-fried until it’s medium rare, then continue to add 1 liter of water to cook. Season the soup with spices: 1 teaspoon of chili powder, 1 teaspoon of seasoning powder, 1/2 teaspoon of salt powder, 1 teaspoon of soy sauce.

    Cook for about 5 minutes until the soup boils, then add the enoki mushrooms and stir briefly with a little green onion before enjoying.

Clams 500 gr Enoki mushrooms 200 gr Shallots 5 bulbs Garlic 3 cloves Perilla 50 gr Soft tofu 1 box Fish sauce 1/2 teaspoon Chili sauce 1 teaspoon Cooking oil 2 teaspoons Common seasoning a little (sugar/ salt/ seasoning powder)

How to Choose Fresh Clams

  • Live clams will have two tightly closed shells, making it very difficult to open them by hand. If the clam is slightly open and you touch it, if it reacts by moving or closing its shell, that is a fresh clam.
  • Do not choose clams that can be easily opened by hand, as these clams are dead and will also have a foul smell.

  • Prepare Enoki Mushrooms and Clams

    Soak the clams in salted water, adding a few slices of chili to the soaking water so that the clams can expel sand for about 1 – 2 hours.

    Cut off the ends of the enoki mushrooms, then cut them into bite-sized pieces and soak them in salted water, separating the mushrooms.

    Cut the tofu into small square pieces.

    In addition, peel the shallots and garlic, then mince them, and wash the perilla leaves and chop them finely.

  • Cook soft tofu

    Add 2 tablespoons of cooking oil to the pot, when the oil is hot, add onion and garlic to sauté until fragrant. Next, pour in about 1 liter of water and bring to a boil. Once the water is boiling, gently drop the soft tofu in without letting it break.

    Add the seasonings gradually to taste: 1 teaspoon of seasoning powder, 1/2 teaspoon of salt, 1/2 teaspoon of fish sauce, 1 tablespoon of sugar, 1 teaspoon of chili paste.

    Tip: When seasoning, do not add too much sugar as the clams already have natural sweetness.
