How to make Green Bean Oyster Porridge

  • Cook the porridge

    Wash the sticky rice, regular rice, and green beans with water, removing any damaged or moldy grains.

    After washing, put the rice and beans into a pressure cooker, add 700ml of water, 2 teaspoons of seasoning, 1/2 teaspoon of salt, 1/4 teaspoon of monosodium glutamate, and 1 teaspoon of sugar, then turn on the porridge cooking mode and simmer for about 30 minutes until the porridge is soft.

  • Prepare and marinate the oysters

    To save time, you should buy pre-shucked oyster meat that is packaged at the store or supermarket. After purchasing, rinse the oysters with salt and then wash them thoroughly with water, letting them drain.

    Marinate the oysters with 1/2 teaspoon of seasoning, 1/3 teaspoon of monosodium glutamate, 1/3 teaspoon of salt, 2/3 teaspoon of sugar, and 2/3 of minced ginger and sliced shallots. Mix well and let the oysters absorb the seasoning for about 15 – 20 minutes.

  • Prepare other ingredients

    Wash the scallions. Cut the leaves into small pieces, keep the scallion heads intact.

    Pick the young leaves of the Vietnamese coriander, wash them, and let them drain. Wash the cilantro and chop it finely.

  • Stir-fry oysters

    Heat a pan on the stove, add 1 tablespoon of cooking oil and wait for it to get hot.

    Add the remaining ginger and shallots to the pan, sauté until fragrant.

    Next, add all the marinated oysters and stir-fry on high heat for about 1 – 2 minutes until the oysters are just cooked and firm, then turn off the heat, and sprinkle an additional 1/3 teaspoon of pepper on top.

    Tip: It is advisable to stir-fry oysters over high heat and not to stir-fry them for too long to avoid releasing water and losing nutrients, which would make them less delicious.

  • Add oysters to the porridge

    The porridge after cooking for 30 minutes, release the pressure cooker, then add the oysters and chopped green onions, and let it sit for another 5 minutes to finish.

    Scoop the porridge into a bowl, add more green onions, Vietnamese coriander, fried onions, and a little pepper on top, and decorate it nicely to complete.

Fresh oysters 500 gr Minced meat 300 gr White rice 80 gr Lemongrass 3 stalks Red onion 10 gr Bean sprouts 50 gr Coriander 10 gr Green onions 30 gr Fish sauce 1 tablespoon Cooking oil 1.5 tablespoons Seasoning a little (sugar; salt; pepper; monosodium glutamate; seasoning powder)

How to Choose Fresh Pork

You can buy pork to grind at home using a meat grinder or buy pre-minced pork as mentioned in the article!

  • For whole pieces of pork, first, you need to pay attention to the color. The color of good meat is bright pink, not too red and not too pale. Pork that is pale, has a greenish tint, and smells bad is spoiled, you should not choose this type of meat.
  • Pork that is firm and has high elasticity is good meat. You can test it by pressing your finger into the meat; if it bounces back immediately, is not slimy, and does not leak water or fluid, then it is good.
  • For pre-minced pork, you should buy it from reputable stores or supermarkets.
  • You should choose pork shoulder which has both lean and fatty meat so that your dish does not become dry or too greasy with excess fat.

How to Prepare Minced Oyster Porridge

  • Prepare the oysters

    Fresh oysters bought from the store or supermarket, you need to clean off any shell fragments sticking to the oysters, rinse them with salt, and then wash with clean water, let them drain.

    Wash the scallions thoroughly. Keep the root part intact, and chop the leaves finely.

    Chop the coriander finely. Wash the bean sprouts and let them drain.

    Peel the shallots and slice them. Cut the lemongrass in half and crush it.

    Place a pot on the stove, adding 1/2 tablespoon of cooking oil. When the oil is hot, add 2/3 of the sliced shallots to fry until golden over medium heat. When the shallots turn light yellow, turn off the heat immediately. Strain the fried shallots through a sieve and let the oil drain. Set the fried shallot oil aside.

    Tips for crispy delicious fried shallots:

    • You should fry over medium heat, not high heat to prevent the shallots from burning quickly.
    • When the shallots turn light yellow, turn off the heat immediately and use chopsticks to stir for about 20 – 30 seconds to achieve a nice yellow color. Do not wait until the shallots are fully golden before turning off the heat, as they will turn dark yellow and become bitter.
    • If you’re making a large quantity, you should fry them in batches.

  • Cooking Porridge

    After purchasing the white rice, rinse it thoroughly to remove dirt, then add the fried onion oil and mix well.

    Tip: Mixing the rice with fried onion oil helps the rice become glossy and fluffy, making the porridge more delicious when cooked.

    Add the rice to the pot along with 700ml of water and cook on medium heat for about 30 minutes until the porridge is soft.

  • Stir-frying Minced Meat and Oysters

    Place a pan on the stove, add 1 tablespoon of cooking oil and heat it. When the oil is hot, add the remaining sliced shallots and sauté until fragrant, then add the minced pork and stir-fry on high heat until the meat is cooked and firm. Next, add 1/2 teaspoon of MSG, 1 teaspoon of salt, and 1/2 teaspoon of seasoning powder to the pan, stir-frying for another minute to let the meat absorb the spices, then transfer the meat to a bowl.

    Next, add 1/3 of the chopped green onions to the pan and sauté until fragrant. Then, add all the oyster meat and stir-fry on high heat with 1/2 teaspoon of MSG, 1 teaspoon of salt, 1/2 teaspoon of seasoning powder, 1 teaspoon of sugar, and 1/2 teaspoon of pepper. Stir continuously for 3 minutes and then turn off the heat.

    Tip:

    • It’s best to stir-fry the oysters and minced meat over high heat to prevent excess moisture, making the dish more flavorful.
    • You should stir-fry the oysters first to eliminate their fishy smell.

    After the porridge is cooked thoroughly, add the oysters and 2/3 of the stir-fried minced meat into the pot. Next, add 1 teaspoon of seasoning powder, 1/2 teaspoon of monosodium glutamate, 1 tablespoon of fish sauce, and all of the remaining green onion tops, then season to taste, stir well for about 2 more minutes, and then turn off the heat.

    Serve the porridge in a bowl, add chopped green onions, coriander, fried onions on top, sprinkle a little pepper, and garnish it nicely to finish.

Tips for a successful implementation

  • If you have time, you should soak the rice for about 1 – 2 hours before cooking the porridge, which helps the porridge become soft and tastier. Before soaking the rice, you need to rinse it thoroughly to remove any sand and dirt attached to the rice.
  • Alternatively, you can rinse the rice, let it sit to dry, then put it in a pan and roast evenly over medium-low heat until the rice grains turn light yellow, then cook as usual. This method helps the porridge grains to expand evenly and look more appealing and delicious.
  • The water ratio is also very important; you can aim for a ratio of 1:4 for rice and water, which is the most suitable, or you can adjust it according to your preferences.
  • Throughout the cooking process, you must stir the porridge at least once every 10 minutes and cook over medium heat; otherwise, the rice will settle at the bottom of the pot and cause the porridge to burn.
  • You can use a mix of sticky rice and regular rice to cook the porridge, which will help make the porridge soft, delicious, and not boring to eat.

How to choose fresh, delicious oysters

  • For the oyster shell: You should choose shells that have a pointed top and two tightly closed layers, as this indicates that the oyster is still alive and fresh.
  • For the oyster meat: You should select oysters that, when opened, still have their meat firmly attached and filling the oyster shell, and contain a lot of seawater. Avoid buying oysters that open easily when pried apart, as this means the oyster is dead, and the meat will not be tasty.
  • The oyster meat looks fresh, juicy, has a sea-like smell, and a distinct oyster aroma.
  • Avoid choosing oysters with eggs, as the meat will be bitter and not delicious. Do not select oysters that have a foul or rotten smell, or unusual colors, as these are dead oysters.

How to clean oysters to remove sand

For whole oysters:

  • Soak the oysters in clean water for about 2 hours, then use a brush to scrub the oyster shell under running water to clean off any dirt.
  • Then, use a large pair of scissors to cut close to the edge of the oyster about 1cm, then use the tip of the scissors to press firmly against the upper edge of the oyster shell and apply strong pressure to detach the top shell.
  • At this point, you just need to gently use a knife to take out the oyster meat.

For pre-processed oyster meat: Rinse the oysters with diluted saltwater or white wine to eliminate the fishy smell, then gently rinse again with clean water.
