How to choose fresh ingredients

How to choose fresh pork ribs

  • It is advisable to choose fresh pork ribs that are light pink in color, with good elasticity when pressed, and without a sour smell.
  • When selecting ribs, choose those with small and flat bones as these have more meat and less bone compared to larger, round ribs.
  • Avoid choosing ribs that are too small because if the ribs are small, they are likely from a small pig, which may not be tasty and does not ensure quality.

How to choose fresh spinach (bok choy, spinach)

  • When selecting spinach, choose bundles that still have the roots at the bottom, with dark green leaves that are fresh and not wilted.
  • You should buy spinach packaged in bags at supermarkets or stores selling Da Lat vegetables to minimize the risk of buying wilted, damaged greens and those that may have been sprayed with pesticides.
  • Avoid choosing spinach that has been soaked in water, as it will quickly become bruised and darken when cooked, losing its crispness and flavor.

How to choose fresh and delicious chicken

  • You should choose chickens with fresh, shiny skin, a natural pink color, or thin skin with a light yellow color; if the breast, wings, and back are slightly darker yellow, then it is definitely a good chicken.
  • Choose chickens that have no odor, and the skin surface is not bruised or discolored.
  • For chicken wings, select pieces with the wing joint still firm, a decent thickness of skin that tightly adheres to the meat.
  • Observe the inner fat layer; if it differs from the outside skin color, then the chicken has been dyed with harmful chemicals and should not be purchased.
