  • Delicious dried bamboo shoots have a light yellow color, an amber hue, and a shiny surface. They retain the characteristic aroma, have a wide and thick texture, feel dry to the touch, and can be broken easily.
  • Choose bamboo shoots that have an even color, short segments, and no fibers. Select more tips because they will be softer and tastier when cooked compared to the base.
  • Avoid choosing: Bamboo shoots that are overly shiny or too dull, have a strange odor (musty smell). Avoid buying bamboo shoots with mold spots, or those that feel soft or can be easily broken.

  • The temperature of the bones when purchased also affects their freshness; do not choose bones that are cold as they may have been frozen and are no longer fresh.
  • Avoid small marrow bones as they are from smaller pigs, which may be sick and slaughtered early for sale; these small marrow bones should not be bought to ensure safety.
