How to choose dried bamboo shoots
- Good dried bamboo shoots are light yellow, have an amber color, and a glossy appearance. They retain a characteristic aroma, have a wide and thick texture, feel dry to the touch, and can be easily broken.
- You should choose bamboo shoots that are evenly colored, short in length, and have no fibers. Opt for the tips as they will be softer and tastier when cooked compared to the base.
- Do not choose: Bamboo shoots that are overly shiny or too dull in color, have an unusual smell (stale smell). Avoid purchasing bamboo shoots that have mold spots, feel soft, or can be easily broken.

Prepare the ingredients
You soak the dried bamboo shoots in water or rice washing water for about 1 hour to soften them.
Tip: If you like, you can change the water 2 – 3 times to make the bamboo shoots cleaner.After soaking, you bring a pot of water to a boil, add 1 teaspoon of salt, then add the bamboo shoots and boil for about 2 minutes. When the bamboo shoots are soft, remove them, rinse with cold water, squeeze dry, and tear them into bite-sized pieces.
The pork belly slices you bought should be soaked in salted water for about 10 minutes. Use your hands to rub the meat all over to remove blood and impurities, helping to reduce the odor. After that, rinse with clean water and drain, cut into bite-sized pieces (you can cut them large like for braised dishes or as you prefer).

Seasoning
Add the pork into the slow cooker, then add 3 tablespoons of seasoning powder, 1 tablespoon of sugar, 1 teaspoon of salt, 2 tablespoons of fish sauce, 2 teaspoons of coloring sauce, 2 teaspoons of pepper, 1 tablespoon of minced garlic, and 1 tablespoon of minced shallots into the pot.
Then stir well to let the meat absorb the seasoning.
Tip: If you don’t have a slow cooker, you can use a rice cooker or any pot to cook. -
