How to make Red Bean Soup with Ribs

  • Prepare the ingredients

For red beans, white beans, and black beans, soak them in water for 2 hours before cooking to soften the beans.

Clean the straw mushrooms and stir-fry them briefly with a little salt for 3 – 5 minutes over medium heat to prevent them from smelling bad.

Peel the carrots, wash them, then cut into flower shapes; one half into thin slices and the other half into small cubes.

To eliminate the foul smell of the ribs, wash them clean with salt and a little lemon juice. Next, blanch the ribs in boiling water for 1 – 2 minutes to clean and whiten them.

Tip: To avoid the soup becoming cloudy, you should not add the black beans to the pot at the same time as the other two types of beans. You should boil a separate pot of water and cook the black beans separately for 20 minutes before adding them to the soup pot.

Next, you add the carrots and briefly sautéed straw mushrooms and season with 2 teaspoons of seasoning powder, 1 teaspoon of salt, 1/2 teaspoon of monosodium glutamate, 1/2 teaspoon of pepper and boil for another 5 minutes.

Taste and adjust the seasoning to your liking, then add the chopped green onions and cilantro and turn off the heat.

  • You should choose beans that are bright red in color and of medium size so that after cooking, the beans achieve softness and a delicious nutty flavor.
  • Avoid selecting overly large beans, as these are often not tasty, have fewer nutrients than smaller beans, and particularly tend to have a slight astringent taste when eaten.
  • Do not buy red beans if the beans are infested with pests and show signs of mold or unpleasant odors.
