Glutinous rice 800 gr Red beans 400 gr Coconut milk 120 ml Pandan leaves 3 branches Salt 1 teaspoon Sugar 70 gr Water 1.2 liters

How to Choose Red Beans

  • You should choose beans that are bright red, not infested, and show no signs of mold or unpleasant odors.
  • You should choose beans of moderate size so that after cooking, they achieve a soft texture and delicious flavor.
  • You should not choose overly large beans, as these tend to taste less good, have fewer nutrients than smaller beans, and often create a slight astringent taste when eaten.

How to make Red Bean Sticky Rice with a Rice Cooker

  • Soak and Boil the Beans

    Soak the red beans in water for 6 to 8 hours or overnight.

    Place the pot on the stove, add the red beans, 1 teaspoon of salt, and 1.2 liters of water, and cook on high heat until it boils, then reduce to low heat, cover, and simmer for 45 minutes before turning off the heat, keeping the lid on until the beans cool. Drain the water, separating the red beans and the liquid.

    Wash the glutinous rice until the water is clear. Mix the glutinous rice and beans together.

  • Cooking Sticky Rice

    Place pandan leaves at the bottom of the rice cooker, then add the sticky rice and beans on top, finally pour 720ml of bean water (about 3 rice bowls) into the pot and use a ladle to spread it evenly on the surface.

    Turn on the rice cooker and cook until it switches to keep warm. During the cooking process, about 20 minutes in, use chopsticks to stir it up so that the sticky rice and beans cook evenly. When the cooker switches to keep warm, do not open the lid immediately; let it sit for about 15 minutes before opening the lid so that the beans and sticky rice can soften.

    Dissolve 70g of sugar in coconut milk, then drizzle it evenly over the sticky rice and cover the pot again, turning on the cooking until the pot switches again.
