Finished product
The steamed salmon with cabbage and cheese is absolutely delicious when served hot. The gentle sweetness of the fish and cabbage, combined with the creamy flavor of the cheese, is truly irresistible.
How to choose fresh salmon
You can use whole salmon or salmon fillets, either is fine!
For whole salmon
- Salmon gills: observe that for fresh salmon, the gills should be red, not bruised or blackened.
- Salmon body: check the scales and skin of the fish to ensure they are shiny and smooth. The body should not have scratches, bruises, and the scales should not be peeling off.
- Salmon eyes: look for bright, clear eyes that are not cloudy or yellowish, indicating the fish is still fresh.
For salmon fillets
- Choose salmon that has a bright orange color, with evenly distributed fat marbling that is white and smooth, without any signs of browning or a foul smell. Fresh salmon will not be mushy and should have a certain firmness.
- Avoid pieces of fish that are mushy, pale in color, or have cloudy fat marbling as this indicates the fish has been stored for too long and is not fresh.
How to eliminate the fishy smell of salmon
Salmon has a distinct flavor, but to truly enjoy its taste, you need to know how to eliminate the fishy smell. You can refer to one of the methods below:
Method 1: Remove the fishy smell of salmon with lemon
- Add 2 – 3 tablespoons of lemon juice and 1 teaspoon of salt to a bowl of clean water.
- Place the salmon in and gently stir, letting it sit for about 30 seconds to 1 minute, then rinse with clean water. You can also use a slice of lemon after juicing to rub and gently massage the fish to make it cleaner.
Method 2: Remove the fishy smell of salmon with fresh milk
- Place the fish meat in a bowl and pour in enough fresh milk to completely submerge the fish.
- Soak the salmon in milk for about 10 minutes, then rinse it clean and let it drain.
Method 3: Remove the fishy smell of salmon with alcohol and ginger
- You take a little ginger and chop it finely or crush it. Then put it in a bowl and pour white wine in; if you don’t have wine, you can substitute it with vinegar, then add the piece of salmon and stir gently.
- Soak the fish in the mixture for about 7 – 10 minutes, then take it out and rinse it clean with cold water.
