    After cutting, put the yam into a steamer and steam for 20 minutes. After 15 minutes of steaming, open the lid, add 2 tied pandan leaves, then cover and steam for another 5 minutes.

  • Making coconut milk

    Scoop 2 tablespoons of coconut milk into a bowl containing tapioca flour and stir well to dissolve the tapioca flour completely in the coconut milk.

    Then, pour 100ml of coconut milk into a pot, place on the stove and heat over medium flame. After about 10 minutes, when the coconut milk is hot and near boiling, add the tapioca flour-coconut milk mixture and 1 vanilla pod.

    Stir continuously, after 5 minutes, add 50g of sugar and continue stirring until the coconut milk boils. Lower the heat and cook for another 2 minutes. Turn off the heat and let cool.

  • Mash and marinate the purple yam

    After 20 minutes, the purple yam is cooked; carefully take it out into a bowl and use a spoon to mash it well.

    After mashing, add 50ml of coconut milk and the remaining 100g of sugar, then mix thoroughly. Next, add 250ml of fresh coconut water, stirring well so that the yam and other ingredients are completely blended together.

    Place a pot on the stove, add all the sweet potato mixture and the remaining vanilla tube. Adjust the heat to low, stir well to prevent the mixture from burning, and cook for about 10 minutes.
